Abstract

PURPOSE: To prepare a novel food like to minced meat, by treating vegetable pro- tein with an alkali, and then with an acid in an amount necessary to substantially neutralize the alkali.
CONSTITUTION: A vegetable protein selected from gluten and soybean protein is mixed with a 2W6N solution of an alkali such as sodium hydroxide, potassium hydroxide, sodium carbonate, etc., and kneaded thoroughly with a mixer. The amount of the alkali is selected to give the pH of the mixture of ≥11 (pref. 12). The alkali is neutralized by adding a necessary amount of a 2W6N solution of an acid such as hydrochloric acid, citric acid, glutamic acid, acetic acid, etc. followed by thorough mixing. The product thus obtained can be used as a raw material of a hamburger steak, etc. by mixing with minced meat.
