Abstract

PURPOSE: To obtain a nice product for sliced raw fish or tempura materials, having the shape, taste and chewiness similar to bleached whale meat, by using a specific method.
CONSTITUTION: A mixture of a konjak paste (konjak powder swollen with water) with a starch paste (a boiled and gelatinized aqueous solution of starch, e.g. potato starch) and an aqueous protein (a solution of protein, e.g. casein, soybean protein, gelation, or frozen fish-paste in water or aqueous alkali), is incorporated with an alkali (e.g. milk of lime) to form an alkaline paste, which is extruded and coagulated in a heated alkaline coagulation bath at 50 to 90°C, then frozen at -10 to -20°C and thawed. The weight ratio between konjak powder, starch, and protein is preferably 100:100:5W100.
