Abstract

PURPOSE: To prepare expanded fried beam curd having improved elasticity, without draining of the raw bean curd nor addition by yam, etc., by using a bean curd added with a thermo-coagulating vegetable protein.
CONSTITUTION: Soybean curd is mixed with a thermo-coagulating vegetable protein, e.g. soybean protein, peanut protein, or wheat protein, and kneaded and formed to a desired form. The ratio of water to the crude protein in the mixture is ≤6, pref. 2.5W5. The formed mixture is, pref. after warming, expanded by frying in an oil.
