Abstract

PURPOSE: To prepare a cheese-like food having excellent texture, taste, and flavor, economically and easily, by the use of soybean protein, wheat protein and edible oils and fats as raw materials.
CONSTITUTION: A mixture of 1 part by weight of soybean protein and 1W0.1 part of wheat protein, is compounded with 1.5W5 parts of water, 0.3W3 parts of edible fats or oils (e.g. soybean oil, corn oil, rapeseed oil, cottonseed oil, palm oil, peanut oil, tallow, lard, fish oil, etc.), and if necessary, proper amounts of other additives (seasonings such as salt, sweetener, etc., flavorings such as cheese flavor, emulsifiers, starch, etc.). The compound is heated at 70W100°C to obtain the title cheese- like food.
