Abstract

PURPOSE: To obtain an oil having excellent flavor, mellow taste and improved taste-imparting effect, by adding chopped or ground vegetables to an edible vegetable oil or fat, heating the mixture, separating the oil layer, and adding an oil-soluble flavor thereto.
CONSTITUTION: Chopped or ground vegetables such as cabbage, lettuce, SHUN- GIKU (Chrysanthemum corronarium), carot, ginger, celery, onion, etc. are added to edible vegetable oil or fat such as soybean oil, rapeseed oil, corn oil, etc. The amount of the vegetable is 5W50wt% of the oil. The mixture is heated at 90W 150°C to evaporate the water in the vegetable essentially completely, and then further heated at 110W170°C. The mixture is maintained at the temperature of ≤60min, and the oil phase is collected. The oil is mixed with an oil-soluble flavor obtained from the spices such as ginger, Guinea pepper, pepper, etc. to obtain the objective tasty and flavoring oil.
