Claims (7)

  1. 바실러스 리세니포르미스와 바실러스 스테아로서모필러스로부터 유도된 α-아밀라아제의 혼합물로 이루어지며, 상기 α-아밀라아제 혼합물은 NU로 측정된 100%의 혼합물의 총 α-아밀라아제 활성도를 기준으로 바실러스 리세니포르미스 α-아밀라아제의 NU에 있어서 측정된 활성도 10 내지 90%를 함유하는 것을 특징으로 하는 α-아밀라아제 조성물.
  2. 제1항에 있어서, α-아밀라아제 혼합물은 바실러스 리세니포르미스 α-아밀라아제의 NU로 측정된 확성도 25 내지 50%를 함유하는 것을 특징으로 하는 α-아밀라아제 조성물.
  3. 바실러스 리세니포르미스와 바실러스 스테아로서모필러스로부터 유도된 α-아밀라아제의 혼합물로 이루어지며, 상기 α-아밀라아제은 NU로 측정된 1005의 혼합물의 총 α-아밀라아제 활성도를 기준으로 바실러스 리세니포르미스 α-아밀라아제의 NU로 측정된 활성도 10내지 90%를 함유하는 α-아밀라아제 조성물로 액화과정을 수행하는 것을 특징으로 하는 전분 또는 전분낟알등의 슬러리를 액화시키는 방법.
  4. 제3항에 있어서, α-아밀라아제 혼합물을 NU로 측정된 100%의 혼합물의 총 α-아밀라아제 활성도를 기준으로 바실러스 리세니포르미스 α-아밀라아제의 NU로 측정된 활성도 25내지 50%를 함유하는 것을 특징으로 하는 방법.
  5. 제3항 또는 제4항에 있어서, α-아밀라아제 조성물의 투여량 수준은 전분 슬러리의 건조고체(DS) g당 100NU를 초과하지 않는 것을 특징으로 하는 방법.
  6. 제5항에 있어서, α-아밀라아제 조성물의 투여량은 gDS당 40내지 80NU의 범위인 것을 특징으로 하는 방법.
  7. 제3항 내지 제6항 중 어느 하나에 있어서, 액화는 100 내지 115℃ 범위의 온도에서 1내지 60분간 제트-쿠킹시키고 이어서, 온도를 90내지 100℃ 로 감소시키고 반응혼합물을 30내지 120분간 유지시킴으로써 행하여 그후 이렇게 액화된 전분은 노화에 대해 안정하며, pH는 과정을 통해 5.5내지 6.0으로 유지되는 것을 특징으로 하는 방법.
