Claims (1)

  1. 도계처리시 목, 다리, 내장을 제거하고 2-3°씨에서 24시간 염지 처리된 원료육을 골육분리기에서 약 10-4mm로 절단 압착후 계육과 뼈로 분리하여 닭뼈를 콜로이드밑에서 극미립 콜로이드상 액체로 분쇄한 후, 계육과 닭뼈의 콜로이드상 액체를 4:1의 비율로 믹서기에서 혼합한 것을 -40°씨에서 2.5-3시간 냉동 건조함을 특징으로 하는 닭고기 재구성육의 제조방법.
