Claims (9)
- 콩을 분쇄, 가열, 및 응고시켜 순두부를 제조하는 단계;상기 응고된 순두부를 사각통에 정치시켜 초벌로 물을 빼는 초벌 물빼기 단계;상기 초벌 물빼기가 완료된 두부를 다단으로 적층하여 두부의 자중에 의해 2차적으로 물을 빼는 2차 물빼기 단계;2차 물빼기가 완료된 두부를 역층으로 다단으로 적층하여 두부의 자중에 의해 3차적으로 물을 빼는 3차 물빼기 단계를 포함하는 것을 특징으로 하는 두부제조 방법.
- 제1항에 있어서, 상기 순두부 제조단계는세척된 콩을 실온에서 물에 불리는 불림단계;불려진 콩을 물과 함께 갈아내는 분쇄단계;상기 분쇄단계에서 제조된 콩물을 가열하는 가열단계;상기 가열단계에서 끓여진 콩물에 응고제를 첨가하는 혼합단계;상기 응고제와 혼합된 콩물을 75℃ 내지 78℃로 식혀 완전히 응고시키는 응고단계로 이루어지는 것을 특징으로 하는 두부제조 방법.
- 제1항에 있어서, 20 - 25도 농도의 간수와 10 - 25도 농도의 소금물을 1:9-9:1의 범위로 혼합하여 사용하는 것을 특징으로 하는 두부제조방법.
- 제1항에 있어서, 상기 순두부를 변의 길이가 15㎝ 내지 40㎝의 크기인 보자기에 싸서 정치시카는 것을 특징으로 하는 두부제조 방법.
- 제1항에 있어서, 상기 사각통은 사방 4㎝ 내지 15㎝의 크기로 제조되는 것을 특징으로 하는 두부제조방법.
- 제1항에 있어서, 상기 2차 및 3차 물빼기 단계에서 3단으로 정치되는 것을 특징으로 하는 두부제조방법.
- 제1항에 있어서, 상기 2차 및 3차 물빼기 단계는 15분 내지 20분 정도로 이루어지는 것을 특징으로 하는 두부제조방법.
- 제1항 내지 제7항 중 적어도 어느 한 항의 공정에 의해 제조된 두부.
- 바닥에 배출구가 형성되고 최대 직경과 높이가 4㎝ 내지 15㎝인 격막이 형성된 두부 물빼기 판.
