Claims (10)
- 캔디덩어리내의 물의 량(water amounts)이 중량으로 1 내지 1.5%로 감소되고, 상기 덩어리가 고압하에서 중성 탄산가스에 균질하게 혼합되며, 그 내부에 가스 기포들이 포집된 상기 덩어리의 냉각및 응고가 이중벽을 갖추고 고압에 견디며 70리터의 체적을 바람직하게 갖는 수평으로 놓여진 반응기내에서 실행되며, 교반 메카니즘에 의해서 상기 설탕 덩어리를 교반시키는 것은 수평축의 중심에 대하여 30°의 각도로 놓여진 평판 플레이트 형상의 블레이드(1)를 갖는 수평식의 반응기 중심에서 서로 배치된 2개의 회전축들과, 상기 블레이드들에 동일한 두께와 폭들을 갖고, 반응기의 내측면에 평행으로 그리고 그들 각도의 변경없이 블레이드들을 연결하기 위하여 그 상부상에 위치되며, 그들의 단부들이 상기 내측면에 평행으로 접혀지는 평판형태의 스트리퍼(2)들로 이루어지며, 상기 반응기의 중앙에 서로 서로 배치된 2개의 수평축들내에서 상기 외표면으로 부터 중앙으로 순환하는 냉각수에 의해서 짧은 시간내에 캔디 덩어리를 냉각시키는 포핑 캔디의 제조방법.
- 제 1항에 있어서, 상기 교반 공정은 바람직하게 3 내지 8분을 지속함을 특징으로 하는 방법.
- 제 1항및 제 2항에 있어서, 상기 교반공정중에서, 탄산가스는 45기압으로 공급되고, 30기압으로 감압되어짐을 특징으로 하는 방법.
- 제 1항에 있어서, 상기 반응기는 이동식 플랫폼상에 수평으로 놓여짐을 특징으로 하는 방법.
- 제 1항에 있어서, 상기 교반블레이드들은 일측에서 제공되고, 바람직하게는 상기 교반축의 상부에 연결되어짐을 특징으로 하는 방법.
- 제 1항에 있어서, 상기 블레이드들은 상기 중심에 대하여 대략 30°의 각도로 배치되어짐을 특징으로 하는 방법.
- 제 1항 내지 제 6항에 있어서, 상기 축은 서로에 대하여 배치된 2개의 중공축들을 포함하고, 냉각유체는 내측 축으로 유입되어 상기 외측축과 내측축사이의 공간으로 순환되어짐을 특징으로 하는 방법.
- 제 1항내지 제 7항에 있어서, 상기 교반작동은 캔디의 거품발생을 위하여 7내지 8분동안 지속되고, 작은 포핑을 위하여 4,5 내지 6분동안 지속됨을 특징으로 하는 방법.
- 제 1항내지 제 8항에 있어서, 상기 블레이드는 오목하게(concave) 형성됨을 특징으로 하는 방법.
- 제 1항에 있어서, 상기 축은 120rpm으로 회전함을 특징으로 하는 방법.
