Abstract
본 발명은 단백하고 뛰어난 소화흡수에도 불구하고 곱창 특유의 냄새로 인하여 기피하던 곱창을 남녀노소 할 것 없이 누구나가 영양식으로 즐길 수 있도록 둔내가 완화 또는 제거된 곱창을 제공한다.
또한 본 발명은 곱창 내부의 곱이 그대로 들어 있는 고품질의 곱창을 제조하여 영양이 풍부하면서도 소비자가 선호하는 곱창을 생산할 수 있어 비싼 값에 판매할 수 있는 곱창을 제공한다.

Claims (4)
- 구이용 곱창의 가공방법에 있어서,
상기 곱창을 제조하기 위하여 세척한 소의 소장 또는 돼지 대장으로 구성되는 곱창 100중량부에 중탄산나트륨 40 ~ 50중량부와 소금 5~15중량부를 혼합 세척하여 곱창을 제조하는 단계;
상기 제조된 곱창의 내부 이물질이나 상한 부위을 제거하기 위하여 LED램프가 설치된 곱창선별장치에서 선별하는 단계;
상기 이물질을 제거한 곱창을 0℃ 내지 5℃의 온도에서 숙성시키는 단계;
상기 숙성된 곱창을 90~95℃의 온도에서 30~50분 동안 쪄낸 다음 8~12분 동안은 가열하지 않고 뜸을 들인 후 통풍이 잘 되는 음지에서 상온으로 식혀 주되, 5~20분에 한 번씩 곱창을 뒤집어주면서 식혀주는 단계;
상기 상온으로 식혀준 곱창 중 직경이 1cm 이상의 곱창을 포장하는 것을 특징으로 하는 구이용 곱창의 제조방법. - 삭제

상기 곱창을 포장할 때 곱창 무침장을 함께 포장하되, 곱창 2kg에 곱창 무침장 500g의 비율로 포장하는 것을 특징으로 하는 구이용 곱창의 제조방법.
