Claims (9)
- 이눌린 합성효소를 수크로오스에 접촉시켜 8 내지 25의 평균 중합도를 갖는 이눌린 생성하는 이눌린의 제조방법에 있어서,이눌린의 평균 중합도가 수크로오스 농도를 3 내지 68%(w/w)로 조정함으로써 조절되고;이눌린 합성효소가 바실러스 에스피 217C-11(Bacillus sp. 217C-11)(FERM BP-7450)로부터 유래된 것으로서, 수크로오스에는 작용하여 이눌린을 생성하지만, 케스토오스, 말토오스, 락토오스, 트레할로오스, 셀로비오스에는 작용하지 않는 작용 및 기질특이성을 가지며,분자량 : 45,000 내지 50,000최적 온도 : 40 내지 50℃열안정성 : 45℃ 이상에서 점진적으로 불활성화되기 시작하고, 50℃에서 70%의 잔류 활성을 가지고,최적 pH : 45℃에서 7~8pH 안정성 : pH 6 이상에서 안정한 것을 특징으로 하는 이눌린의 제조방법.
- 이눌린 합성효소를 수크로오스에 접촉시켜 8 내지 25의 평균 중합도를 갖는 이눌린 생성하는 이눌린의 제조방법에 있어서,이눌린의 평균 중합도가 접촉 시 온도를 20 내지 70℃로 조정함으로써 조절되고;이눌린 합성효소가 바실러스 에스피 217C-11(Bacillus sp. 217C-11)(FERM BP-7450)로부터 유래된 것으로서, 수크로오스에는 작용하여 이눌린을 생성하지만, 케스토오스, 말토오스, 락토오스, 트레할로오스, 셀로비오스에는 작용하지 않는 작용 및 기질특이성을 가지며,분자량 : 45,000 내지 50,000최적 온도 : 40 내지 50℃열안정성 : 45℃ 이상에서 점진적으로 불활성화되기 시작하고, 50℃에서 70%의 잔류 활성을 가지고,최적 pH : 45℃에서 7~8pH 안정성 : pH 6 이상에서 안정한 것을 특징으로 하는 이눌린의 제조방법.

- 이눌린 합성효소를 수크로오스에 접촉시켜 이눌린을 생성하는 이눌린의 제조방법으로서, 이눌린 합성효소가 바실러스 에스피 217C-11(Bacillus sp. 217C-11)(FERM BP-7450)로부터 유래된 것으로서, 수크로오스에는 작용하여 이눌린을 생성하지만, 케스토오스, 말토오스, 락토오스, 트레할로오스, 셀로비오스에는 작용하지 않는 작용 및 기질특이성을 갖는 것이며, 상기 수크로오스가 상기 이눌린 합성효소에 의해 소비되어 평형상태에 도달하였을 때 수크로오스의 추가로 첨가를 반복하여 행하여 이눌린의 생성반응이 계속되게 함으로써 이눌린의 평균중합도를 높이는 것을 특징으로 하는 이눌린의 제조방법.

- 제1항, 제2항 또는 제4항 중 어느 한 항에 있어서, 이눌린 합성효소가, 해당 효소를 생산하는 미생물의 배양액 또는 배양균체이거나, 또는 배양된 세포, 세포 추출물 또는 고정화된 세포의 분쇄 생성물인 것을 특징으로 하는 이눌린의 제조방법.
- 제1항, 제2항 또는 제4항에 기재된 방법을 2 이상 조합하여 실시하는 것을 특징으로 하는 이눌린의 제조방법.
