Claims (2)
- 세척 및 파쇄된 손바닥 선인장과 매실을 12∼15 : 1의 중량비율로 상호 혼합한 후 이들 혼합물 중량의 2∼3배 물을 가하여 90∼130℃에서 3∼6시간 추출한 다음, 추출액에 펙티나아제(pectinase) 섬유질분해효소를 첨가하여 50∼60℃에서 2시간 동안 반응시키고 90℃에서 30분간 실화시키고, 실화시킨 추출액을 3차례 여과시켜 손바닥 선인장과 매실 혼합추출액을 형성하는 공정;과상기 형성된 손바닥 선인장과 매실 혼합추출액에, pH 4-5의 완전 숙성된 사과추출액을, 상기 손바닥 선인장과 매실 혼합추출액 대 사과추출액이 1 : 0.15∼0.2의 중량비율을 이루도록 상호 혼합하며, 그 후 혼합액을 농축시키는 공정으로 이루어지는 것을 특징으로 손바닥 선인장 함유 천연 두부 응고제 제조방법.
- 청구항 제1항에 기재된 방법에 의하여 제조된 손바닥 선인장 함유 천연 두부 응고제.
