Claims (4)
- 공지의 고추장에 40∼60˚브릭스 당도의 당액으로 당액코팅 처리된 홍삼립 0.2∼5 중량%를 함유하는 홍삼고추장.
- 삭제
- 주원료를 증숙하고 숙성시킨 후 부재료를 혼합하여 살균하고 냉각 포장한 고추장을 제조함에 있어서,수삼을 증자 한 후 65∼75℃에서 15∼25시간 동안 1차 건조한 홍삼을 2∼10mm로 절단하여 홍삼립을 제조하고, 당류와 물을 혼합하여 40∼60˚브릭스의 당도를 지니는 당액을 상기 홍삼립에 분무한 다음 열풍건조기로 건조시키는 공정을 2∼3회 반복하여 제조한 당액코팅 처리된 홍삼립을 살균하고 냉각된 고추장에 첨가함을 특징으로 하는 홍삼고추장의 제조방법.
