Abstract
Description
[1]エリスリトール、アセスルファムカリウム及び還元水あめから成る群から選択される1又は複数の甘味成分を有効成分として含む、ピロロキノリンキノン及び/又はその塩の安定化剤。
[2]還元水あめがマルチトール、ソルビトール又はラクチトールを主成分とする、[1]に記載の安定化剤。
[3]甘味成分がエリスリトールであり、更に羅漢果抽出物を含む、[1]に記載の安定化剤。
[4]甘味成分が還元水あめであり、更にスクラロース又はステビア抽出物を含む、[1]又は[2]に記載の安定化剤。
[5]ピロロキノリンキノンの塩がピロロキノリンキノンジナトリウムである[1]〜[4]のいずれかに記載の安定化剤。
[6][1]〜[5]のいずれかに記載の安定化剤を含む組成物。
[7]飲食品の形態である、[6]に記載の組成物。
[8]酸性の飲料の形態である、[7]に記載の組成物。
[9][1]〜[5]のいずれかに記載の安定化剤とピロロキノリンキノン及び/又はその塩とを接触させる工程を含む、ピロロキノリンキノン及び/又はその塩の安定化方法。
[10]ピロロキノリンキノン及び/又はその塩の安定化剤を製造するための、エリスリトール、アセスルファムカリウム及び還元水あめから成る群から選択される1又は複数の甘味成分の使用。

検出波長:259nm
移動相:30mM酢酸−70mM酢酸アンモニウム

味の評価得点
5:非常においしい
4:味に深みがありおいしい

合計50mL容量になるように還元麦芽糖水あめ5g、エリスリトール2g、アセスルファムK10mg、クエン酸60mg、クエン酸ナトリウム40mg、BioPQQ22mg、ストロベリーエッセンス100mg(ゴールデンケリーパテント製)、残り水を調合することにより飲料を調製した。味の評価得点5
実施例1のサンプルを室温2年に相当する60℃2週間の条件で保存した。保存後のサンプルをHPLCにかけたところ、97%のBioPQQが回収された。飲料中に沈殿物は見られなかった。
ストロベリーエッセンスに代えて相当量の水を添加した点を除き、実施例1と同様に飲料を調製し、官能試験と加速保存試験を行った。
ストロベリーエッセンス100mgに代えてレモンエッセンス100mg(ゴールデンケリーパテント製)を添加した点を除き、実施例1と同様に飲料を調製し、官能試験と60℃で1週間(1年相当)の加速保存試験を行った。
使用する甘味成分を還元麦芽糖水あめ5g、エリスリトール2g、アセスルファムK10mgから以下の表に記載のものに置き換えた点を除き、実施例2と同様に飲料を調製し、官能試験と60℃で1週間(室温1年相当)の加速保存試験を行った。結果を以下の表に示す。
ストロベリーエッセンスに代えて下記表に記載の香料を添加した点を除き、実施例1と同様に飲料を調製し、官能試験と加速保存試験を行った。加速保存試験の条件は、実施例4−6のサンプルについて60℃2週間、実施例7−10について60℃1週間とした。結果を以下に示す。
安定性、味、ともに優れた飲料であった。また、すべてのサンプルで沈殿物は見られなかった。
使用する甘味成分を還元麦芽糖水あめ5g、エリスリトール2g、アセスルファムK10mgから以下の表に記載のものに置き換えた点を除き、実施例1と同様に飲料を調製し、官能試験と60℃で1週間(1年相当)の加速保存試験を行った。
使用する甘味成分を還元麦芽糖水あめ5g、エリスリトール2g、アセスルファムK10mgからエリスリトール2.5g、アセスルファムK10mgに置き換えた点を除き、実施例1と同様に飲料を調製し、官能試験と60℃で2週間(室温2年相当)の加速保存試験を行った。味の評価点は4で、BioPQQ回収率は100%であった。沈殿物はなかった。
使用する甘味成分を還元麦芽糖水あめ5g、エリスリトール2g、アセスルファムK10mgからアセスルファムK20mgに置き換えた点を除き、実施例10と同様に飲料を調製し、官能試験と60℃で2週間(室温2年相当)の加速保存試験を行った。BioPQQ回収率は100%であった。味の評価点は3であった。飲料中には沈殿物が見られた。このように、甘味料がアセスルファムK単独の場合にはピロロキノリンキノンの保存安定性は高かったが、沈殿が生じ、味も単調になった。
合計100mL容量になるようにラカント(サラヤ株式会社、エリスリトール/羅漢果抽出物)11g、クエン酸120mg、クエン酸ナトリウム80mg、BioPQQ22mg、残り水を調合することにより飲料を調製した。味の評価点は4で60℃1週間後のBioPQQ回収率は100%であった。
還元麦芽糖水あめに代えて下記表に記載の還元水あめ(いずれも物産フードサイエンス製)を添加した点を除き、実施例1と同様に飲料を調製し、官能試験と60℃で1週間(1年相当)の加速保存試験を行った。使用した還元水あめはいずれも単糖のソルビトール及び二糖のマルチトールが主な成分である。固形分100とした時、エスイー600は単糖40〜50、二糖40〜50、三糖8〜13、四糖1〜5、五糖以上1〜5である。スイートG2は単糖1〜6、二糖70〜77、三糖10〜20、四糖1〜6、五糖以上1〜10である。スイートP EMは単糖40〜50、二糖45〜55、三糖1〜5、四糖0〜3、五糖以上0〜3である。
合計100mL容量になるように、以下の表に記載の甘味成分、クエン酸70mg、クエン酸酸ナトリウム30mg、BioPQQ20mg、残り水を調合することにより飲料を調製した。調製した飲料を60℃で所定期間保存してHPLC分析を行った。結果を以下に示す。
Claims (10)
- エリスリトール、アセスルファムカリウム及び還元水あめから成る群から選択される、1又は複数の甘味成分を有効成分として含む、ピロロキノリンキノン及び/又はその塩の安定化剤。
- 還元水あめがマルチトール、ソルビトール及び/又はラクチトールを主成分とする、請求項1に記載の安定化剤。
- 甘味成分がエリスリトールであり、更に羅漢果抽出物を含む、請求項1に記載の安定化剤。
- 甘味成分が還元水あめであり、更にスクラロース及び/又はステビア抽出物を含む、請求項1又は2に記載の安定化剤。
- ピロロキノリンキノンの塩がピロロキノリンキノンジナトリウムである、請求項1〜4のいずれか一項に記載の安定化剤。
- 請求項1〜5のいずれか一項に記載の安定化剤を含む組成物。
- 飲食品の形態である、請求項6に記載の組成物。
- 酸性の飲料の形態である、請求項7に記載の組成物。
- 請求項1〜5のいずれか一項に記載の安定化剤とピロロキノリンキノン及び/又はその塩とを接触させる工程を含む、ピロロキノリンキノン及び/又はその塩の安定化方法。
- ピロロキノリンキノン及び/又はその塩の安定化剤を製造するための、エリスリトール、アセスルファムカリウム及び還元水あめから成る群から選択される1又は複数の甘味成分の使用。
