L.delbrueckii subsp.Bulgaricus NBRC13953
L.casei NBRC15883
ルーマニア産アカシア蜂蜜(山田養蜂場社)を10%(w/w)となるように精製水で希釈し、pH8.0の蜂蜜水溶液を調製した。該水溶液を121℃で5分間処理して滅菌し、10%蜂蜜培地を得た。使用した蜂蜜の固形分濃度は81.6%以上であった。
ルーマニア産アカシア蜂蜜を10、25又は30%(w/w)になるように精製水で希釈し、pH8.0の蜂蜜水溶液を調整した。該水溶液を121℃で5分間処理して滅菌し、10、25又は30%蜂蜜培地を得た。
試験例2で得られた発酵液のうち、24時間及び48時間時点の発酵液を0.2μmフィルターでろ過滅菌し、HPLC分析用サンプルとした。HPLC分析前に、各サンプルを0.45μmフィルターで再度ろ過した。市販の乳酸及び酢酸を希釈して検量線サンプルを調製し、検量線を作成した。乳酸及び酢酸の保持時間はそれぞれ5.08分、5.46分であった。

Claims (8)
- ラクトバチルス・クンキーによって蜂蜜濃度25%超の蜂蜜含有物を発酵して得られる蜂蜜発酵物。
- 前記ラクトバチルス・クンキーが、ラクトバチルス・クンキーBPS402(受託番号FERM BP−11439)である、請求項1に記載の蜂蜜発酵物。
- 請求項1又は2に記載の蜂蜜発酵物を含む、食品、化粧品、医薬品又は医薬部外品。
- ラクトバチルス・クンキーによって蜂蜜濃度25%超の蜂蜜含有物を発酵する工程を含む、蜂蜜発酵物の製造方法。
- 前記ラクトバチルス・クンキーが、ラクトバチルス・クンキーBPS402(受託番号FERM BP−11439)である、請求項4に記載の製造方法。
- 請求項4又は5に記載の製造方法により得られた蜂蜜発酵物を添加する工程を含む、食品、化粧品、医薬品又は医薬部外品の製造方法。
- ラクトバチルス・クンキーを含む、蜂蜜濃度25%超である蜂蜜含有物の発酵用組成物。
- 前記ラクトバチルス・クンキーが、ラクトバチルス・クンキーBPS402(受託番号FERM BP−11439)である、請求項7に記載の発酵用組成物。
