Abstract
Description
味をさらに増強させることができる。この場合、マヨネーズ様食品におけるアジピン酸、フマル酸、コハク酸の各含有量は、好ましくは0.1〜1%、より好ましくは0.2〜0.7%、さらに好ましくは0.3〜0.7%である。また、酢酸とアジピン酸との質量比は、好ましくは1:0.1〜1:10であり、より好ましくは1:0.2〜1:5である。酢酸とフマル酸との質量比は、好ましくは1:0.1〜1:10であり、より好ましくは1:0.2〜1:5である。酢酸とコハク酸との質量比は、好ましくは1:0.1〜1:10であり、より好ましくは1:0.2〜1:5である。
Claims (4)
- 酢酸0.1〜1.5質量%及び卵黄を含有する、粘度50〜500Pa・sのマヨネーズ様食品であって、2,3,5−Trimethyl pyrazine及びFurfuralを含有するマヨネーズ様食品。
- 固相マイクロ抽出−ガスクロマトグラフ−質量分析法で測定した場合に、(a)酢酸のピーク面積に対する2,3,5−Trimethyl pyrazineのピーク面積の比が0.000004〜0.003、(b)酢酸のピーク面積に対するFurfuralのピーク面積の比が0.001〜0.05である請求項1記載のマヨネーズ様食品。
- Dimethyl pyrazineを含有する請求項1又は2記載のマヨネーズ様食品。
- 固相マイクロ抽出−ガスクロマトグラフ−質量分析法で測定した場合に、酢酸のピーク面積に対するDimethyl pyrazineのピーク面積の比が0.00007〜0.07である請求項3記載のマヨネーズ様食品。
