Abstract
PURPOSE: To simplify a process for preparing ABURAAGE, by neutralizing soybean protein which is precipitated and separated under acidic conditions with an alkali containing alkaline earth metal, adding an edible oil to the neutralized protein to give an emulsified mixture, molding the mixture, and frying it with an oil.
CONSTITUTION: Powder of soybean protein which is precipitated and separated under acidic conditions is blended with an alkalifying agent containing calcium or magnesium in an amount to adjust the protein to a pH of 6W8 in a solid state, to give a mixture which is used. The mixture is blended with water and an edible oil to give the emulsion A. Vegetable protein having ≥5.5wt% protein content is emulsified with water and an edible oil to give the emulsion B having an average particle diameter of oil drops of ≤10μm. The emulsion A and the emulsion B are blended and molded to give an ingredient, which is fried with an oil to give a product.
