Abstract
PURPOSE: To prepare a "tofu" (bean curd) containing "yomogi cha" (powder of mugwort), provided with taste, flavor, and fragrance of "yomogi cha" of its own, and with preventing and remedying effects on circulatory diseases, by using "yomogi cha" and soybeans as raw ingredients.
CONSTITUTION: 1kg Soybeans are ground, blended with about 2W30g "yomogi cha" to give a mixture, to which water is added. The prepared ingredient is boiled and squeezed by common preparation of "tofu" to give soybean milk, to which a calcium salt and glucono delta lactone are added and the blend is coagulated.
