Abstract

PURPOSE: An aqueous extract from unmodified defatted soybean is treated with an acid to prepare a dispersion of precipitated protein and the dispersion is adjusted in pH and brought into direct contact with steam in a pipeline to produce a soybean protein material with high dispersibility, high solubility and good gel formation property.
CONSTITUTION: An aqueous solution or dispersion of unmodified defatted soybean of higher than 85 NSI is adjusted in pH to 6.5W7.5 to remove the water- insoluble fraction. Then, the resultant extract is controlled to 4.0W5.0pH to remove the soluble substances such as soybean whey and obtain an acid precipitate of soybean protein. Water is added to the precipitate and further an alkali mix consisting of calcium and/or magnesium hydroxide and sodium hydroxide at a weight ratio of 1/12W10/7 is added thereto to adjust the pH to 6.5W7.5 and dissolve the protein. Then, the protein is brought into direct contact with steam in a pipe line at about 80W150°C for longer than 2 seconds and dried.
