Abstract

PURPOSE: To prepare frozen "tofu"(bean curd) being made into improved "tofu" by treating it with water after drying or adding hot water to it so that it is restored again, obtained by dissolving starch and/of carbonate in soybean milk, preparing "tofu" conventionally, followed by freezing it, and thawing.
CONSTITUTION: 0.01W1pts.wt., preferably 0.1W0.5pt.wt. starch, e.g., raw starch, processed starch, starch decomposition product, starch derivative, etc. and/or 0.0001W0.05pt.wt. preferably 0.0005W0.01pt.wt. carbonate, e.g., sodium carbonate, sodium bicarbonate, etc. based on 1pts.wt. protein(calculated as pure protein) in soybean milk or emulsified material are dissolved in an aqueous solution of soybean milk powder, coagulated conventionally with a coagulant, and frozen.
