Abstract

CONSTITUTION: The enzymatic hydrolysis of undenatured soybean protein containing 11S-globulin or a substance containing the same such as soybeans, defatted soybeans or protein extracted from the same with water is conducted under an ionic strength of lower than 0.5 (less than 3% in aqueous sodium chloride solution) under mild agitation at 35W50°C for about 2 weeks.
