Abstract
PURPOSE: The enzymatic hydrolysis of undenatured soybean protein is conducted under a specific ionic strength to produce a soysauce-like seasoning free from turbid formation without steaming or boiling.
CONSTITUTION: The enzymatic hydrolysis of undenatured soybean protein containing 11S-globulin or a substance containing the same such as soybeans, defatted soybeans or protein extracted from the same with water is conducted under an ionic strength of lower than 0.5 (less than 3% in aqueous sodium chloride solution) under mild agitation at 35W50°C for about 2 weeks.
