Abstract
PURPOSE: To prepare powdered extract of scallop, by the spray-drying of extract obtained as a by-product in the production of seasoned eyes of scallops by the steaming and salting of scallops.
CONSTITUTION: Scallops are steamed by conventional process, and the resulting eyes of scallops are treated with saline water and dried to obtain seasoned eyes of scallops. The liquid (secondary extract) containing the extract of scallops, and obtained by the saline-water treatment, is desalted and concentrated by e.g. ultrafiltration, and separated to the concentrate and the filtrate. The filtrate of the secondary extract is recycled to the saline-water treatment process, and the concentrate of the secondary extract is mixed with the drain liquid (primary extract liquid) containing the extract of scallops obtained by the steaming of scallops. The mixture is spray-dried to obtain the objective powdered extract.
