Abstract

PURPOSE: Cherry leaves that have been pickled in a brine are treated with reduced pressure and immersed in an aqueous medium to produce pickled cherry leaves that are tinted with a uniform and bright tortoiseshell or raw rubber color and maintain good taste and flavor.
CONSTITUTION: Cherry leaves is immersed in a nontoxic brine of higher than 12 Baume degree such as an aqueous solution of sodium chloride, calcium chloride or sodium sulfate and exposed to a reduced pressure of lower than 700mmHg for longer than 1min. Then, the resultant cherry leaves are pickled in a nontoxic salt solution of higher than 12 Baume degree.
