Abstract
PURPOSE: To prepare pickles which are fresh and tasty in an extremely short time by treating pickles materials in a vacuum to remove air and vaporized gas and to accelerate permeation of enzymes and seasonings.
CONSTITUTION: Pickles are prepared in a short time by treating pickles materials with enzymes and seasonings in a vacuum apparatus. Examples of pickles are cucumbers, melons, eggplants, carrots, radishes, burdocks, onions, and greens. Examples of enzymes are cellulase, macelozyme, pectinase and lactobacilli. An example of seasonings necessary for fresh pickling of 100g of cucumbers is an aqueous solution which contains 40W80g of salt per 1000W2000ml of water and it is preferable to adjust the concentration of the salt so as to attain the value of 1.5W3.0% in a final product. And it is preferable to adjust the concentration of soy so as to attain the value of 2W3% in a final product by diluting threefold with water, when soy is used.
