Abstract

PURPOSE: To obtain a soft pickled sea tangle having improved sense of eating, and consisting of a raw sea tangle having nutrient substances and a color in the native state essentially, by impregnating a raw sea tangle which is softened by the pretreatment with a seasnoing.
CONSTITUTION: A salted sea tangle is washed, desalted with flowing water, drainged in the pretreatment, and dipped in a treating solution containing sodium glutamate, glycine and sodium acetate at a weight ratio between them and water of (0.12W0.2):(0.12W0.2):(0.04W0.08):1 and softened. After the treatment, the sea tangle is drained and dipped in a seasoning for 3 days or longer. The resultant softened sea tangle is then impregnated with a seasoning solution and seasoned.
