Abstract

PURPOSE: To prepare refined "sake" (Japanese wine) having sufficiently high flavor of "sake" and the fresh taste characteristic to newly brewed "sake" in spite of low alcohol content, by dissolving fermentation gas obtained from fermenting unrefined "sake" into cooled refined "sake".
CONSTITUTION: Fermentation gas obtained from fermenting unrefined "sake", preferably the one obtained from the unrefined "sake" fermented for 10W15 days and passed through a condenser to remove a part of the alcohols and esters contained therein, is dissolved into refined "sake" prepared by conventional method and cooled at ≤0°C. The alcohol content of the refined "sake" is pref. about 13%.
