Abstract
PURPOSE: To obtain a healthful drink, readily drinkable and storable for a long time, by adding sugar, thick malt syrup, etc. to a liquid base of pulverized Houttuynia cordate THUNB. to form a culture medium, by accelerating the fermentation under heating, and by filtering and purifying the liquid after full maturity.
CONSTITUTION: Live leaves, stalks or roots (L) of Houttuynia cordata THUNB. are washed with water to remove the dirt. After draining, the leaves etc. (L) are pulverized, and separated into a coarse residue and a liquid, which is used as a base, mixed with sugar, thick malt syrup and honey, and then agitated. The mixture liquid is inoculated with a yeast fungus, placed into a vessel and heated to 25W 40°C to accelerate the metabolism of the mycelium of a lactic acid bacterium growing naturally on the seeded yeast fungus and L and to complete the fermentation. The turbid solution is filtered and purified to give a clear liquid healthful drink readily drinkable, storable for a long time (in a colored bottle sealed with a cork at about 15°C in the dark for 6 years), and free from the unique smell of Hottuynia cordata THUMB.
