Abstract

PURPOSE: To prepare a coffee liqueur jelly having a good flavor, by using an extract obtained from coffee beans with an alcoholic solution containing fructose.
CONSTITUTION: Coffee beans and fructose are added to an alcoholic solution, e.g. while liquor, and the resultant blend is then allowed to stand at room temperature for about 3 weeks to give a coffee liqueur. A jelly agent, e.g. carrageenan, is added to the resultant liqueur to prepare the aimed coffee liqueur jelly by the conventional method.
