Abstract

PURPOSE: To prevent the occurrence of sediments in the long-term storage of a liquid seasoning and to obtain a high-quality liquid seasoning, by blending a liquid seasoning with a specific amount of agar or its mixture with carrageenan, followed by removal of dregs.
CONSTITUTION: At an arbitrary period in the preparation of a liquid seasoning, 0.001W0.1wt% based on the liquid seasoning of agar or its mixture with carrageenan is added to the liquid seasoning so that sediments, e.g., dregs, are adsorbed, and the dregs are removed by a conventional method, to give a high-quality liquid seasoning causing no dregs in the storage of a product. An amount of agar or its mixture with carrageenan is most preferably 0.01W0.05wt% (W/V). A time for the addition of agar is preferably after being heated to not lower than 40°C or during a heating process. The use of sodium acrylate in the addition of agar or its mixture with carrageenan improves the separation and removal effect of the sediments.
