Abstract

PURPOSE: To prepare a healthy food using a carp, by adding muscovado, crystal sugar, and honey to a carp which has been crushed, followed by boiling it by a low fire for a relatively long time.
CONSTITUTION: For example, a 1.2kg carp is boiled in about 1.8 liter sake (liquor) with its shape remained for about 3hr by a low fire. The carp is crushed by a proper method, and about 1kg crystal sugar, about 500g muscovado, and about 100g honey are added to the crushed carp. The prepared matter is boiled by a low fire for about 7hr.
