Abstract
PURPOSE:To obtain the titled food having confectionery-like flavor, by dipping and boiling lotus pips in water in the presence of sodium bicarbonate, then dipping the boiled pips in molasses in two or more stages, smearing the resultant pips with powdered sugar, softening the hard epidermis and removing impurities on the surface. CONSTITUTION:(B) Sodium bicarbonate in an amount of preferably 0.003-0.05wt.% based on (A) lotus pips is added to thereto. The lotus pips are dipped in the water, e.g. for 8-20hr, then boiled in water preferably for 4-10hr, washed with water and cooled. (C) The obtained lotus pips are then dipped in molasses with preferably 20-65 deg. sugar content in two or more stages while increasing the sugar content to the later stages and then smeared with powdered sugar to afford the aimed food.
