Abstract

PURPOSE:To obtain the titled food having confectionery-like flavor, by dipping and boiling lotus pips in water in the presence of sodium bicarbonate, then dipping the boiled pips in molasses in two or more stages, smearing the resultant pips with powdered sugar, softening the hard epidermis and removing impurities on the surface.
