Abstract

PURPOSE: To prepare heat-resistant low-calorific agar noodles, by adding soybean powder, wheat flour, and a coagulant for "konjak" to a hot aqueous solution obtained by boiling agar and a proper amount of "konjak" powder in water, and subjecting the mixture to the successive processes comprising cooling, coagulation, slitting, freezing, thawing, and drying.
CONSTITUTION: Agar and "konjak" powder are boiled in water for 10W30 minutes to obtain a hot aqueous solution containing about 1W5% of agar and about 0.05W 2.5% of "konjak" powder component, and the solution is kept at 50W85°C. Separately, a mixture composed of 2W5 parts by weight, based on 1 part of the agar, of wheat flour and about 1/3 part of soybean powder is kneaded with 5W10 times volume of water to obtain a paste. The paste is added to the above agar solution, the mixture is added with about 3%, based on the "konjak" powder, of milk of lime prepared by emulsifying lime with 7 times volume of water, and the composition is coagulated by cooling. The coagulated product is slitted, frozen at -10W-20°C, thawed with water, and dehydrated with a centrifugal separator to obtain the objective agar noodles.
