Abstract

PURPOSE:To prepare the titled devil's tongue jelly which can be homogeneously mixed, readily scorched and preserved for a long term, by mixing a mixed solution of parched grain flour with devil's-tongue flour, adding a coagulating agent to the mixture while adjusting the pH of the mixture, kneading the mixture, shaping the kneaded product and subsequently steaming the shaped product. CONSTITUTION:50-100pts.(wt.) of parched grain flour is substantially homogeneously mixed with 3,000-4,000pts. of water at ordinary temperature and subsequently with approximately 100pts. of devil's tongue flour. The prepared mixture is mixed with a coagulating agent having a preliminarily adjusted pH of 11-12 under stirring until the pH of the whole mixture becomes 10.5-11 and subsequently kneaded to form a flexible rice cake-like material. The material is shaped into steak-like blocks and steamed to provide the objective devil's tongue jelly.
