Abstract

PURPOSE: To prepare instant dried noodles having uniform restoring properties and improved taste, by making a wetted raw ingredient consisting essentially of flour into a uniform thickness, subjecting it to the first steam treatment, followed by subjecting the prepared noodle lines to the second steam treatment.
CONSTITUTION: A raw ingredient comrising flour as a main ingredient and various kind of subsidiary foods is processed into blended and wetted powder having particle diameters of about 2W3mm by the blending and humidifying machine 1, made into uniform coarse matter noodle ingredient having a thickness of about 10W20mm onto the endless conveyor 3 by the thickness adjusting machine 4, sent to the first steaming chamber 7, and 60W80% gelatinization is attained. The noodle ingredient is molded by the forming machine 9 having means to knead powder into the given shape to prepare the noodle line pieces 10, passed through the dispersing machine 11, 10W60wt% water is added to the pieces, the pieces are sent to the second steaming chamber 15, and ≥90% gelatinization is attained. The pieces are dried to a water content of ≤10wt% by the drying chambers 19 and 19'. Applicable for macaroni, spaghetti, noodles, etc.
