- 【特許請求の範囲】 1.脂肪相を含む食用の脂肪製品であり、脂肪相の脂肪(A)が、トランス脂肪 酸残基の含量を10%以下しか有せず、 少なくとも45℃のスリップ融点を有する水素化魚油及び液体油を含む脂肪ブレ ンド(C)から誘導されたエステル交換された脂肪(B)並びに任意の他の脂肪 (D) を含む、食用の脂肪製品。 2.脂肪(A)が、20乃至100 %のエステル交換された脂肪(B)及び0乃至80 %の他の脂肪(D)を含む、請求項1に記載の脂肪製品。 3.脂肪(A)が、40乃至100 %のエステル交換された脂肪(B)及び0乃至60 %の他の脂肪(D)、好ましくは、60乃至100 %のエステル交換された脂肪(B )及び0乃至40%の他の脂肪(D)を含む、請求項2に記載の脂肪製品。 4.30乃至100 %の脂肪相及び任意に70%以下の分散された水性相を含む、請求 項1乃至3のいずれか1請求項に記載の脂肪製品。 5.40乃至100%の脂肪相及び0乃至60%の水性相、好ましくは、60乃至100%の 脂肪相及び0乃至40%の水性相を含む、請求項4に記載の脂肪製品。 6.他の脂肪(D)が、液体油、部分的に水素化された魚油、ラウリン酸残基に 富んだ脂肪、パーム油、パーム油画分又は2つ以上のそれらの混合物から成る、 請求項1乃至5のいずれか1請求項に記載の脂肪製品。 7.C12、C14、C16及びトランス脂肪酸残基の含量が、脂肪(A)の50%未満 、好ましくは40%未満である、請求項1乃至6のいずれか1請求項に記載の脂肪 製品。 8.トランス脂肪酸残基の含量が、脂肪(A)の7%未満である、請求項1乃至 7のいずれか1請求項に記載の脂肪製品。 9.脂肪(A)が、少なくとも8、好ましくは11乃至50、より好ましくは15乃至 40のN20を有する、請求項1乃至8のいずれか1請求項に記載の脂肪製品。 10.15%以下の、好ましくは0乃至10%の、より好ましくは0乃至5%のトラン ス脂肪酸残基の含量しか有せず、20乃至80%の、少なくとも45℃のスリップ融点 を有する水素化された魚油、80乃至10%の液体油並びに任意に、40%以下の、 好ましくは0乃至30%の、ラウリン酸残基に富んだ脂肪を含む脂肪ブレンド(C )から誘導される、請求項1乃至9のいずれか1請求項に記載の脂肪製品におけ る使用に適するエステル交換された脂肪(B)。 11.脂肪ブレンド(C)が、30乃至75%の水素化魚油及び70乃至25%の液体油、 好ましくは、30乃至70%の水素化魚油及び70乃至30%の液体油から成る、請求項 10に記載のエステル交換された脂肪(B)。 12.分画されていない、請求項10又は請求項11に記載のエステル交換された脂肪 (B)。 13.オレイン画分であるか、オレイン画分を含む、請求項10又は請求項11に記載 のエステル交換された脂肪(B)。 14.水素化魚油が、48乃至59℃の、より好ましくは51乃至59℃のスリップ融点を 有する、請求項10乃至13のいずれか1請求項に記載のエステル交換された脂肪( B)。 15.水素化魚油が本質的に完全に水素化された魚油である、請求項10乃至14のい ずれか1請求項に記載のエステル交換された脂肪(B)。 16.18乃至50のN20及び0乃至15のN35を有する、請求項10乃至15のいずれか1 請求項に記載のエステル交換された脂肪(B)。 17.エステル交換された脂肪(B)が、請求項10乃至16のいずれか1請求項に記 載のエステル交換された脂肪(B)である、請求項1乃至9のいずれか1請求項 に記載の脂肪製品。
