Claims (1)
- 【特許請求の範囲】 1.乾燥ベースで35〜70重量%の澱粉と夫々の量の蛋白質及び砂糖を含む、 押出された、実質的に完全にゼラチン化されたマトリックスを有する組織体を包 含し、該組織体が15〜30重量%の水分含量並びに0.6〜0.9の水活性を有 し、該組織体が手によって変形し且つ、該変形後元の形状に復する弾性を有し、 該組織体が少くとも9ヶ月の細菌学的貯蔵安定性を有し、該組織体が本質的に内 部にオープンセルを有しないものである軟い湿性のパスタ型食品。 2.該組織体が管状、ジティ及びロティニ形状からなる群から選ばれた形状に作 られる請求項1記載のパスタ型食品。 3.該マトリックスが一定量のセモリナを含有する請求項1記載のパスタ型食品 。 4.該マトリックスが界面活性剤を含有する請求項1記載のパスタ型食品。 5.該マトリックスが一定量のグリセリンを含有する請求項1記載のパスタ型食 品。 6.該水活性が0.7〜0.85である請求項1記載のパスタ型食品。 7.該水分含量が18〜23重量%である請求項1記載のパスタ型食品。 8.該マトリックスが乾燥ベースで少くとも65重量%の小麦粉を有する請求項 1記載のパスタ型食品。 9.該砂糖が乾燥ベースで少くとも35重量%のレベルである請求項1記載のパ スタ型食品。 10. 該蛋白質が乾燥ベースで25重量%からのレベルである請求項1記載のパ スタ型食品。 11. 該食品がヒトの消費に適した菓子である請求項1記載のパ スタ型食品。 12. 該砂糖が8〜25重量%のレベルである請求項11記載のパスタ型食品。 13. 該食品がペットフードである請求項1記載のパスタ型食品。 14. 該ペットフードが乾燥ベースで4〜10重量%の蛋白質を含む請求項13 記載のパスタ型食品。 15. 軟い、湿性のパスタ型食品の製法であって、その製法が乾燥ベースで、3 5〜70重量%の澱粉と夫々の量の蛋白質及び砂糖を含有する混合物を製造する 工程と、該混合物に水を加えて水分含有混合物とし、該水分含有混合物を同軸回 転らせんぎりと最終端に押出しダイを有する細長い内筒を有するエクストルーダ ーを通過させ、該水分含有混合物をエクストルーダー中に昇温及び昇圧し、水分 含有混合物の澱粉成分を実質的に完全にゼラチン化し、15〜30重量%の水分 含量及び0.6〜0.9の水活性を有する組織体とし、該組織体を該組織体の有意 な膨張及び組織体中に穴の形成を避けるために212°F以下の温度で押出し、 該組織体の手で変形可能であり且つ変形後元の形状に復元する弾性を有し、該組 織体が少くとも9ヶ月の細菌学的貯蔵安定性を有し、該組織体が直接可食可能で あるものとする工程を包含する軟い、湿性のパスタ食品の製法。 16. 該組織体が管状、ジティ及びロティニからなる群から選ばれた1つの形状 に作られる請求項5記載の製法。 17. 該混合物が一定量のセモリナを含有するものである請求項15記載の製法 。 18. 該混合物が界面活性剤を含有するものである請求項15記載の製法。 19. 該混合物がグリセリンを含有するものである請求項15記 載の製法。 20. 該水活性が0.7〜0.85である請求項15記載の製法。 21. 該水分含量が18〜23重量%である請求項15記載の製法。 22. 該混合物が乾燥ベースで少くとも65重量%の小麦粉を含有するものであ る請求項15記載の製法。 23. 該砂糖が、乾燥ベースで35重量%までのレベルである請求項15記載の 製法。 24. 該蛋白質が、乾燥ベースで25重量%までのレベルである請求項15記載 の製法。 25. 請求項15記載の製法において、該混合物にプレコンディショナー中で水 分を加えその後、水分含量混合物を該エクストルーダー円筒内で加熱する請求項 15記載の製法。 26. 請求項25記載の製法において、該水分含有混合物をプレコンディショナ ー中で100〜212°Fの最高温度にする工程を含む請求項25記載の製法。 27. 請求項25記載の製法において、該水分含有混合物をプレコンディショナ ー中に0.5〜6分間滞留させる工程を含む請求項25記載の製法。 28. 請求項25記載の製法において、該プレコンディショナー中で該混合物に 水分を蒸気又は水として加える工程を含む請求項25記載の製法。 29. 請求項15記載の製法において、該水分含有混合物を該エクストルーダー 中で160〜280°Fの最高温度とする請求項15記載の製法。 30. 請求項15記載の製法において、該水分含有混合物を、該エクストルーダ ー中で300〜2000psiの最高圧力にする 工程を含む請求項15記載の製法。 31. 請求項15記載の製法において、該水分含有混合物がエクストルーダーを 通過中に該水分含有混合物から気体物質を排気する工程を含む請求項15記載の 製法。 32. 請求項31記載の製法において、該排気工程が該水分含有混合物を真空下 に置く工程を含む請求項31記載の製法。 33. 請求項32記載の製法において、該真空が5〜20Hgのレベルである請求 項32記載の製法。 34. 請求項31記載の製法において、該水分含有混合物を排気工程の直前で、 エクストルーダー中で最高温度にする工程を含む請求項31記載の製法。 35. 請求項15記載の製法において、該水分含有混合物の該エクストルーダー 中の滞留時間が0.5〜2.5分である請求項15記載の製法。 36. 請求項15記載の製法において、押出された組織体を押出に引き続いて乾 燥する工程を含む請求項15記載の製法。 37. 請求項15記載の製法において、該混合が該エクストルーダーを通過中に 該エクストルーダー中にフレーバーを加える工程を含む請求項15記載の製法。 38. 請求項15記載の製法において、押出し後に該組織体の表面にクエン酸を 散布する工程を含む請求項15記載の製法。 39. 請求項15記載の製法に従って作られるパスタ型ペットフード製品。
