Abstract
Description
特許文献2には、プロテアーゼ及び/又はセルラーゼを反応させた酵母細胞を用いた、離水又は離油が抑制された食品の製造方法が記載されている。
これに対し、特許文献2には、酵母細胞の使用による離油抑制効果は記載されているが、液状油脂を酵母細胞とともに浸漬液中に用いることによる歩留まり向上効果を考慮したものではない。
また、液状油脂の量は、加熱歩留まりを向上させる点、及び経済性の点から、酵母細胞及び塩化ナトリウムの合計量100質量部に対し60質量部以上1500質量部以下であることが好ましく、180質量部以上940質量部以下であることがより好ましく、310質量部以上850質量部以下であることが特に一層好ましい。
また糖アルコールの量は、加熱歩留まりを向上させる点、及び食味の点から、酵母細胞及び塩化ナトリウムの合計量100質量部に対し60質量部以上1500質量部以下であることが好ましく、320質量部以上1300質量部以下であることがより一層好ましい。
更に、第2の浸漬用混合物が澱粉類を含有する場合、とりわけ、加工澱粉と未加工澱粉を組み合わせることが好ましい。更に本製造方法としては加工澱粉として、架橋及び/又はアセチル化が施された澱粉、特にアセチル化アジピン酸架橋澱粉を用いることが歩留まり向上及び食感向上効果等が特に良好となる点で好ましい。以上より、本発明では、アセチル化アジピン酸架橋澱粉及び澱粉を組み合わせて用いることが最も好ましい。
表1に記載の配合にて、浸漬液を調製した。
ミートテンダライザーとしては、酵母細胞パウダー17質量%、酵母エキスパウダー11.6質量%、炭酸水素ナトリウム66.4質量%及び炭酸ナトリウム5.0質量%の混合物を用いた。酵母細胞パウダーとしては、富士食品工業株式会社のモイステックスを用いた。モイステックスは、酵母細胞から酵母エキスを抽出した後の菌体(酵母細胞の細胞壁、細胞膜等の酵母の骨格部分)を加熱殺菌し、乾燥したものを用いた。
液状油脂としては、サラダ油(原料:菜種油)を用いた。還元水あめとしては、ウエノフードテクノ社製MU-45を用いた。
未加熱の国産サケの切り身(質量は約330~340g)と、同質量の浸漬液とを混合し、浸漬液にサケの切り身を浸漬させた。浸漬状態の切り身を16時間、5℃で静置した。
浸漬液に浸漬させた後のサケの切り身を金ザルの上にあけ、5分間液切りを行った。その後、サケの切り身100質量部に対して表1に記載の照り漬け調味液A又はBを50質量部用い、調味液にサケの切り身を4時間浸漬させた。浸漬時の調味液の温度は5℃とし、静置した。浸漬後のサケの切り身を金ザルの上にあけ、調味液を5分間液切りした。その後、急速凍結機(-30℃)にて、2時間凍結した。
なお、照り漬け調味液A又はBの組成を表2に示す。表2において、澱粉類としては、アセチル化アジピン酸架橋澱粉と澱粉(未加工澱粉)とを質量比35:65で合わせて用いた。また、増粘多糖類としてはキサンタンガムを用いた。表2の照り漬け調味液A及びBの塩分量はいずれも2.9質量%であった。
浸漬液による前処理を行わなかった以外は実施例1及び2と同様にした。
凍結後の切り身を、スチームコンベクションオーブン(ホシザキ社製スチームコンベクションオーブン(MIC-5TB3)、コンビモード、スチーム量2目盛り90%)にて220℃で12分焼成した。
実施例及び比較例において、原料、浸漬液に浸漬した液切り後、調味液に浸漬した液切り後、焼成後の各段階で原料の質量を測定し、下記式にて原料から焼成までの歩留まりを測定した。
浸漬液後歩留まり=浸漬液に浸漬した液切り後の質量/原料質量×100(%)
調味液後歩留まり=調味液に浸漬した液切り後の質量/原料質量×100(%)
歩留まり=焼成後の質量/原料質量×100(%)
また、焼成後のサケについて、下記評価基準にて、柔らかい食感を評価した。
4:市販の漬け魚と同程度である。
3:市販の漬け魚に比べて若干柔らかい。
2:市販の漬け魚に比べて柔らかい。
1:市販の漬け魚に比べてかなり柔らかい。
実施例3において、下記表4に示す通り、浸漬液中の液状油脂及び水の量を変更した。それらの点以外は実施例3と同様にして、浸漬液を調製した。
北米産サケの切り身(質量は約580~600g)と、同質量の浸漬液とを混合し、浸漬液にサケの切り身を浸漬させた。浸漬状態の切り身を16時間、5℃で静置した。
照り漬け調味液として、表2の実施例3と同じ調味液Aを用意した。
浸漬液に浸漬後のサケの切り身を金ザルの上にあけ、5分間液切りを行った。その後、サケの切り身100質量部に対して照り漬け調味液50質量部を用い、調味液にサケの切り身を4時間浸漬させた。浸漬時の調味液の温度は5℃とし、静置した。浸漬後のサケの切り身を金ザルの上にあけ、調味液を5分間液切りした。その後急速凍結機(-30℃)にて、2時間凍結した。
凍結したサケをスチームコンベクションオーブン(ホシザキ社製スチームコンベクションオーブン(MIC-5TB3)、コンビモード、スチーム量2目盛り90%)にて220℃で12分焼成した後、原料からの焼成歩留まりを測定した。結果を表4に示す。
Claims (7)
- 魚介類の生肉を、酵母細胞、塩化ナトリウム、アルカリ剤及び魚介類に由来しない液状油脂を含む浸漬液に浸漬させる工程を有し、
前記浸漬液中の酵母細胞の含有量が0.1質量%以上5質量%以下であり、アルカリ剤の含有量が0.5質量%以上5質量%以下である、食肉加工食品の製造方法(但し、以下の魚介類加工品の製造方法を除く。
(i) 魚介類原料に対してテンダライズ処理する工程、
(ii) テンダライズ処理した魚介類原料に対して減圧処理する工程、
(iii) 減圧処理した魚介類原料を、トランスグルタミナーゼを含む乳化溶液に浸漬し、魚介類原料に乳化溶液を含浸させる工程であって、乳化溶液のエマルションがナノサイズである工程を含む、魚介類加工品の製造方法。)。 - 前記浸漬液が更に糖アルコールを含む、請求項1に記載の食肉加工食品の製造方法。
- 前記浸漬液が前記液状油脂を1.0~20.0質量%含有する、請求項1又は2に記載の食肉加工食品の製造方法。
- 酵母細胞が、酵母エキスを抽出した後の菌体である、請求項1~3の何れか1項に記載の食肉加工食品の製造方法。
- 魚介類の生肉を、前記浸漬液に浸漬させた後、魚介類に由来しない液状油脂及び増粘剤を含む混合物に浸漬させる、請求項1~4の何れか1項に記載の食肉加工食品の製造方法。
- 前記混合物が更に調味料を含む、請求項5に記載の食肉加工食品の製造方法。
- 魚介類の生肉を、
酵母細胞、塩化ナトリウム、アルカリ剤及び魚介類に由来しない液状油脂を含み酵母細胞の含有量が0.1質量%以上5質量%以下であり、アルカリ剤の含有量が0.5質量%以上5質量%以下である浸漬液に浸漬させ、次いで、調味料を含む漬け込み液又は漬け込み床に浸漬させる食肉の漬け込み加工食品の製造方法(但し、以下の魚介類加工品の製造方法を除く。
(i) 魚介類原料に対してテンダライズ処理する工程、
(ii) テンダライズ処理した魚介類原料に対して減圧処理する工程、
(iii) 減圧処理した魚介類原料を、トランスグルタミナーゼを含む乳化溶液に浸漬し、魚介類原料に乳化溶液を含浸させる工程であって、乳化溶液のエマルションがナノサイズである工程を含む、魚介類加工品の製造方法。)。
