Description
糖類と、穀物粉と、色素材からなる粒状の乾燥成形物であって、
着色する対象の加工食品の原料に投入され、原料の混合調整に伴い濃淡を対象に付与する濃淡付与材(被覆されたものを除く)であり、
前記穀物粉の配合量が、濃淡付与材において5−35重量%であり、
アルファ化澱粉を、濃淡付与材において0.1以上5重量%未満含み、
食物繊維を、濃淡付与材において0.01−10重量%含むことを特徴とする濃淡付与材。
(2)
増粘多糖類を、濃淡付与材において0.01以上5重量%未満含むことを特徴とする(1)に記載の濃淡付与材。
(3)
(1)又は(2)に記載の濃淡付与材を、加工食品材料に添加して、撹拌し、撹拌に伴って、濃淡付与材が崩壊、分散して、前記加工食品材料に濃淡を付与することを特徴とする加工食品の製造方法。

なお、本発明では、水分量を除いた原料を配合基準とする。水分/加水は、成形後の乾燥工程で半分程度蒸発するためである。

- 糖類と、穀物粉と、色素材からなる粒状の乾燥成形物であって、
着色する対象の加工食品の原料に投入され、原料の混合調整に伴い濃淡を対象に付与する濃淡付与材(被覆されたものを除く)であり、
前記穀物粉の配合量が、濃淡付与材において5−35重量%であり、
アルファ化澱粉を、濃淡付与材において0.1以上5重量%未満含み、
食物繊維を、濃淡付与材において0.01−10重量%含むことを特徴とする濃淡付与材。 - 増粘多糖類を、濃淡付与材において0.01以上5重量%未満含むことを特徴とする請求項1に記載の濃淡付与材。
- 請求項1又は請求項2に記載の濃淡付与材を、加工食品材料に添加して、撹拌し、撹拌に伴って、濃淡付与材が崩壊、分散して、前記加工食品材料に濃淡を付与することを特徴とする加工食品の製造方法。
