<脂肪含有酸性飲料の製造>
水に、砂糖、脱脂粉乳(北海道乳業社製、脂肪含有率0.9重量%、タンパク質含有率34.5重量%)、全脂粉乳(北海道乳業社製、脂肪含有率26.2重量%、タンパク質含有率25.5重量%)を適量添加し、50℃に加温して溶解させた。その後、予め水に溶解または分散させておいた水溶性ヘミセルロース、HLB11以上のポリオキシアルケン鎖を有する脂肪酸エステル等の表1に記載の材料を含む水溶液を、最終的な含有量が表1の濃度になるように、それぞれ添加、混合した。
尚、表1に記載の材料は、以下に記載のものを使用した。また、表1に記載の組成は、重量%で記載されている。また、表2中の沈殿量、タンパク質量および脂肪量は、重量%で記載されている。
○水溶性ヘミセルロース:大豆多糖類、不二製油社製、ソヤファイブS−DA100
○HLB11以上のポリオキシアルケン鎖を有する脂肪酸エステル:
(A1)デカグリセリンステアリン酸エステル、SWA−10D、HLB14、固形分40重量%、三菱化学フーズ社製
(A2)デカグリセリンステアリン酸エステル、SWA−15D、HLB13、固形分30重量%、三菱化学フーズ社製
(A3)デカグリセリンラウリン酸エステル、L−10D、HLB16、三菱化学フーズ社製
(A4)ポリオキシエチレンソルビタンステアリン酸エステル、TW−S120V、HLB14.9、花王社製
(A5)ポリオキシエチレンソルビタンラウリン酸エステル、TW−L120V、HLB16.7、花王社製

HLB11未満のポリオキシアルケン鎖を有する脂肪酸エステル:

(D1)カルボキシメチルセルロースナトリウム、セロゲンF−907A、第一工業製薬社製
(D2)カルボキシメチルセルロースナトリウム、CMC FL100、欣融社製
株式会社トキメック製「VISCONIC ELD型」粘度計を使用し、25℃における粘度を測定した。
上記方法で得られた脂肪含有酸性飲料を35℃、4週間保存した後、以下の基準で目視観察して評価した(第一段階の評価)。
〔評価基準〕
AA: オイルオフ、クリーム分離がないか、わずかにクリーム分離が認められる。
A : オイルオフがわずかに認められる。
B : オイルオフやクリーム分離がはっきりと認められる。
C : オイルオフやクリーム分離が多量に認められ、乳化が破壊されている。
上記方法で得られた脂肪含有酸性飲料を35℃、4週間保存した後、第一段階の評価よりさらに厳密な基準を設け、目視観察して評価した(第二段階の評価)。
〔評価基準〕
満点を10点として、以下の評価結果から、減点式で点数を算出した。なお、メジアン径が粗大化(1μm以上)したものは、さらに−5点とした。算出した点数が、5点以下だった場合、乳化状態が不安定であると判断した。
(クリーム分散性)
0 :クリームの分散性がよく、容器への付着も少ない
−1:クリームの分散性が悪いが、撹拌後でほぼ消失する。容器への付着は少ない。
−2:クリームの分散性が悪いが、撹拌後でほぼ消失する。容器への付着は多い。
−3:クリームの分散性が悪く、撹拌後もかなり残る。
(オイルオフ)
0 :オイルオフがない。
−2:わずかにオイルオフがある。
−4:オイルオフがはっきりと確認される。
−6:オイルオフが多量に確認される。
上記方法で得られた脂肪含有酸性飲料を35℃、4週間保存した後、粒度分布計(堀場製作所社製LA−920)を使用し、メジアン径を測定した。
上記方法で得られた脂肪含有酸性飲料を35℃、4週間保存した後、試料の一部を採取し、5000rpm、20分間遠心分離した。その後、上澄み液を捨て、20分間転倒静置後、残った沈殿の重量を測定した。沈殿の量を、採取した脂肪含有酸性飲料に対する重量割合として算出した。
Claims (4)
- 水溶性ヘミセルロース及びHLB13以上16.7以下のポリオキシアルケン鎖を有する脂肪酸エステルを含有するpH5以下の脂肪含有酸性飲料であって、
さらに、HLB7以上20以下のショ糖脂肪酸エステル、HLB6以上9以下のポリオキシアルケン鎖を有する脂肪酸エステルおよびソルビタン脂肪酸エステルからなる群から選択される1種以上を含有し、
さらに、タンパク質を含有し、
前記水溶性ヘミセルロースの含有量が、脂肪含有酸性飲料中の割合として0.05〜1重量%であり、
前記水溶性ヘミセルロースと前記HLB13以上16.7以下のポリオキシアルケン鎖を有する脂肪酸エステルの重量比(水溶性ヘミセルロース:HLB13以上16.7以下のポリオキシアルケン鎖を有する脂肪酸エステル)は100:1〜0.1:1であり、
レシチンが未添加であることを特徴とする、pH5以下の脂肪含有酸性飲料。 - メジアン径が1μm未満である、請求項1に記載の脂肪含有酸性飲料。
- 有機酸および/又はその塩を含有する、請求項1または2に記載の脂肪含有酸性飲料。
- 水溶性ヘミセルロース及びHLB13以上16.7以下のポリオキシアルケン鎖を有する脂肪酸エステルを含有するpH5以下の脂肪含有酸性飲料の製造方法であって、
HLB7以上20以下のショ糖脂肪酸エステル、HLB6以上9以下のポリオキシアルケン鎖を有する脂肪酸エステルおよびソルビタン脂肪酸エステルからなる群から選択される1種以上を添加し、
さらに、タンパク質を含有し、
前記水溶性ヘミセルロースの含有量が、脂肪含有酸性飲料中の割合として0.05〜1重量%であり、
前記水溶性ヘミセルロースとHLB13以上16.7以下のポリオキシアルケン鎖を有する脂肪酸エステルの重量比(水溶性ヘミセルロース:HLB13以上16.7以下のポリオキシアルケン鎖を有する脂肪酸エステル)は100:1〜0.1:1であり、
レシチンが添加されていないことを特徴とする、pH5以下の脂肪含有酸性飲料の製造方法。
