Description
ビールに含まれる香味物質であるフラノン類及びラクトン類からなる群から選択される少なくとも一種を甘味系成分とし、
ビールに含まれる香味物質であるアルデヒド類からなる群から選択される少なくとも一種をアルデヒド系成分とした場合に、
該アルコール系成分と、該甘味系成分及び該アルデヒド系成分からなる群から選択される少なくとも一種とを、含有するビール様飲料用風味改善剤を提供する。
表1に記載の糖質ゼロビールに、表2に記載の風味改善剤を添加濃度が4.04ppmとなるように添加した。そして、得られた糖質ゼロビールについて、実施例1と同様にして官能評価を行なった。その結果を図5に示す。本発明の風味改善剤は、糖質ゼロビールに対しても、コク感上昇、酸味低減、ビールらしさ向上をもたらした。
表1に記載のノンアルコールビール風味飲料に、表2に記載の風味改善剤を添加濃度が4.04ppmとなるように添加した。そして、得られたノンアルコールビール風味飲料について、実施例1と同様にして官能評価を行なった。その結果を図6に示す。本発明の風味改善剤は、ノンアルコール飲料に対しても、コク感上昇、ビールらしさ向上をもたらした。更に、麦汁臭フレーバーを抑えることもできた。
Claims (2)
- ジエトキシエタン(アセタール)、2−フェニルエチルアルコール及び2−メチル−1−プロパノールを含むアルコール系成分と、
シュガロン、ソトロン、フラネオール、γ-ノナラクトン及びγ-デカラクトンを含む甘味系成分と、
バニリン、3−メチルブタナール及びフェニルアセトアルデヒドを含むアルデヒド系成分と、を含有し、
該アルコール系成分100重量部に対して、該甘味系成分を0.3〜1.5重量部含有し、
該アルコール系成分100重量部に対して、該アルデヒド系成分を0.04〜0.08重量部含有し、
ビール様飲料にコク感を付与するビール様飲料用風味改善剤であって、
風味改善剤の添加量が、風味を改善しようとするビール様飲料を基準にして1ppm〜10.1ppmであり、
風味を改善しようとするビール様飲料が、低糖質低プリン体ビール様アルコール飲料、糖質ゼロビール様アルコール飲料、又はカロリーゼロノンアルコールビール風味飲料である、ビール様飲料用風味改善剤。 - 請求項1に記載のビール様飲料用風味改善剤を、1ppm〜10.1ppm含有する低糖質低プリン体ビール様アルコール飲料、糖質ゼロビール様アルコール飲料、又はノンカロリーノンアルコールビール風味飲料。
