Claims (9)
- 乳製品、および前記乳製品の重量を基準として少なくとも0.1wt%を含むカルシウム塩を混合して混合物を形成するステップ、
前記混合物の中に、前記乳製品の重量を基準として0.001〜10wt%の生姜汁、生姜粉末、生姜汁より製造された粉末もしくは分離物、または前述の組み合わせを加えるステップ、ならびに
前記混合物に対して、少なくとも200MPaの圧力を加える加圧処理を行い、ゲル状乳製品を形成するステップを含むゲル状乳製品の製造方法。 - 前記乳製品は、脱脂乳製品、低脂肪乳製品、全脂肪乳製品、カゼイン成分を含む製品、または前述の組み合わせを含む請求項1に記載のゲル状乳製品の製造方法。
- 前記乳製品は、哺乳類のミルクを含み、前記哺乳類のミルクは、牛乳または山羊乳を含む請求項1に記載のゲル状乳製品の製造方法。
- 前記カルシウム塩は、下記、乳酸カルシウム、硫酸カルシウム、リン酸カルシウム、炭酸カルシウム、クエン酸カルシウム、グルコン酸カルシウム、および前述の組み合わせからなる群より選ばれた可食性カルシウム塩の1つである請求項1に記載のゲル状乳製品の製造方法。
- 前記混合物の中に、前記乳製品の重量を基準として0.001〜15wt%の糖を加える請求項1に記載のゲル状乳製品の製造方法。
- 前記加圧処理は、冷蔵または室温下で行われる請求項1に記載のゲル状乳製品の製造方法。
- 前記加圧処理は、少なくとも1秒間持続して行う請求項1に記載のゲル状乳製品の製造方法。
- 前記加圧処理の前に前記混合物に対して小分け処理を行うステップを含む請求項1に記載のゲル状乳製品の製造方法。
- 前記製造方法の全てのステップは、冷蔵または室温下で完成される請求項1に記載のゲル状乳製品の製造方法。
