Description
表1の成分リストに従い、ジェラン粉末を様々な濃度で直接使用することによって飲料を製造した。
2.1.濃縮ジェラン水分散液の調製:
純粋なジェラン粉末(Kelcogel LT100−P)2.5重量%、リンゴ酸1重量%及び安息香酸ナトリウム0.12重量%を、乳酸カルシウム5.4重量%の水溶液に添加し、ウルトラタラックス(ultra−turrax)を用いて2分間分散させた。その後、水分散液を冷蔵条件(5℃)下で保存し、飲料を調製するために4週間以内に使用した。保存7日目及び28日目に分散液から一定分量をそれぞれ採取し、栄養寒天の標準平板計数測定によって微生物腐敗について分析した。試料は、微生物腐敗に関していかなる陽性結果も示さなかった。
2.1に記載されたジェラン水分散液を様々な濃度で使用し、表2の成分リストに従って、種々の飲料を製造した。
続いて、純粋なジェラン粉末(Kelcogel LT100−P)2.0重量%又は2.5重量%、及び様々な濃度のリンゴ酸(w/w)を、乳酸カルシウム5.4重量%の水溶液に添加し、ウルトラタラックスを用いて2分間分散させた。
Claims (10)
- ジェラン1〜5重量%、少なくとも1つの二価カチオンの塩3〜15重量%、及び少なくとも1つの酸0.6〜2重量%を含み、
少なくとも1つの二価カチオンの塩がカルシウム塩及び/又はマグネシウム塩であり、
少なくとも1つの酸が、亜リン酸、次亜塩素酸、硫酸、リンゴ酸、クエン酸、フマル酸、プロピオン酸、乳酸、酢酸、安息香酸、ギ酸、ソルビン酸、酒石酸、グルコン酸、メタ酒石酸、アジピン酸及びコハク酸から選択される、ジェラン水分散液。 - 少なくとも1つの二価カチオンの塩が、乳酸カルシウム、塩化カルシウム、クエン酸カルシウム、炭酸カルシウム、乳酸マグネシウム、塩化マグネシウム、クエン酸マグネシウム、炭酸マグネシウムから選択される、請求項1に記載のジェラン水分散液。
- 少なくとも1つの二価カチオンの塩が乳酸カルシウムである、請求項1又は2に記載のジェラン水分散液。
- 少なくとも1つの酸がリンゴ酸である、請求項1〜3のいずれか一項に記載のジェラン水分散液。
- 食品保存料をさらに含む、請求項1〜4のいずれか一項に記載のジェラン水分散液。
- 金属イオン封鎖剤をさらに含む、請求項1〜5のいずれか一項に記載のジェラン水分散液。
- 請求項1〜6のいずれか一項に記載のジェラン水分散液を含む飲料濃縮液。
- 請求項7に記載の濃縮液を含む、そのまま飲める飲料。
- 少なくとも1つの二価カチオンの塩の水溶液に、ジェラン及び少なくとも1つの酸を分散させる段階を含む、請求項1〜6のいずれか一項に記載のジェラン水分散液を調製する方法。
- 請求項1〜6のいずれか一項に記載のジェラン水分散液を、飲料のさらなる成分と混合する段階、及び得られた混合液を低温殺菌する段階を含む、そのまま飲める飲料を調製する方法。
