Description
デンプンを含まない伝統的な詰め物に相当する対照の詰め物、および本発明に従う詰め物を含む、連続的な水相で構成されるチョコレート風味の詰め物2つを調製する。前記詰め物のそれぞれの組成を、以下、第1表中に示す。
21gのソフトケーキを、標準的な方法に従って焼く。当業者に知られるそのようなソフトケーキは、重量で、13%の脂肪、61.8%の糖質(そのうち22.4%が砂糖(モノおよびジサッカリド、17%のショ糖を含む))、6.3%のタンパク質および16.5%の水を含む。
Claims (23)
- 連続的な水相で構成される詰め物であって、前記詰め物は、0.5から0.93の水分活性(Aw)、詰め物の総重量を基準として25重量%未満の脂肪含有量、および、詰め物の総重量を基準として4から40重量%の少なくとも1種の天然または過乾燥した非ゼラチン化デンプンを含有し、
前記詰め物は、デンプ ン粒子を含む非ゼラチン化デンプンであって、前記非ゼラチン化デンプンの前記デンプン粒子の少なくとも5%は10μm以上のサイズを有し、
詰め物のその後の使用の間に非ゼラチン化デンプンのゼラチン化温度以上でデンプンは調理されない
ことを特徴とする詰め物。 - デンプン含有量が、詰め物の総重量を基準として、乾燥重量で、4から26%であることを特徴とする請求項1に記載の詰め物。
- デンプン粒子の少なくとも90%が、2μmおよび100μmの間の範囲に及ぶ粒度分布を有することを特徴とする請求項1または2に記載の詰め物。
- 前記デンプンが、小麦デンプン、米デンプン、コーンスターチ、ワキシーコーンスターチ、ソルガムデンプン、タピオカデンプン、ジャガイモデンプン、キャッサバデンプン、およびそれらの混合物からなる群から選択されることを特徴とする請求項1から3のいずれかに記載の詰め物。
- Awが0.5から0.8であることを特徴とする請求項1から4のいずれかに記載の詰め物。
- Awが0.80から0.93であることを特徴とする請求項1から5のいずれかに記載の詰め物。
- 乾燥物質の含有量が80重量%未満であることを特徴とする請求項1から6のいずれかに記載の詰め物。
- 脂肪含有量が、詰め物の総重量を基準として、0から25重量%であることを特徴とする請求項1から7のいずれかに記載の詰め物。
- 砂糖含有量が、詰め物の総重量を基準として、0から70重量%であることを特徴とする請求項1から8のいずれかに記載の詰め物。
- ショ糖含有量が、詰め物の総重量を基準として、0から30重量%であることを特徴とする請求項1から9のいずれかに記載の詰め物。
- 請求項1から10のいずれかに記載の詰め物を含むことを特徴とする加熱調理した穀類製品。
- 乾燥ビスケットまたはウエハースの2つの層の間に前記詰め物の少なくとも1つの層を含む乾燥ビスケットで構成されることを特徴とする請求項11に記載の加熱調理した穀類製品。
- 前記詰め物が、中が空洞のビスケットの中、またはソフトケーキの層およびチョコレートまたはイミテーションチョコレートの殻の間に入れられることを特徴とする請求項11に記載の加熱調理した穀類製品。
- 前記加熱調理した穀類製品がソフトケーキであることを特徴とする請求項11に記載の加熱調理した穀類製品。
- 詰め物のコアを含むソフトケーキで構成されることを特徴とする請求項14に記載の加熱調理した穀類製品。
- 前記ソフトケーキの少なくとも1つの表面上に詰め物を塗布し、および次いで少なくとも1つの表面上に詰め物を塗布して得られる前記ソフトケーキを巻くことによって得られるロールソフトケーキであることを特徴とする請求項14に記載の加熱調理した穀類製品。
- ソフトケーキの少なくとも2つの層の間に前記詰め物の少なくとも1つの層を含むソフトケーキで構成されることを特徴とする請求項14に記載の加熱調理した穀類製品。
- ソフトケーキの1つの層、およびチョコレートまたはイミテーションチョコレートの殻の間に前記詰め物の少なくとも1つの層を含むソフトケーキで構成されることを特徴とする請求項14に記載の加熱調理した穀類製品。
- 最終製品の総重量を基準として、16重量%から55重量%の前記詰め物を含むことを特徴とする請求項11から18のいずれかに記載の加熱調理した穀類製品。
- 加熱調理した穀類製品の総重量を基準として、1.5重量%から25重量%の脂肪を含むことを特徴とする請求項11から19のいずれかに記載の加熱調理した穀類製品。
- 加熱調理した穀類製品の総重量を基準として、20重量%から63重量%の砂糖を含むことを特徴とする請求項11から20のいずれかに記載の加熱調理した穀類製品。
- 請求項1から10のいずれかに記載の詰め物を含み、詰め物は0.78から0.93のAwを有することを特徴とするバーまたはフレッシュバイト。
- 前記デンプンが粉末であることを特徴とする請求項1に記載の詰め物。
