Claims (2)
- 包装容器入りの嚥下食用すし食品の製造方法であって、増粘多糖類が添加されたペースト状の食材を、凹部容器の内側に流し込み、当該食材からなる層を形成してから、当該層の上に、水を吸収させた米と、水と、増粘多糖類との混合物を炊飯して得た米飯を使用した酢飯であって所定の形状・大きさをした酢飯を置くことによって、前記層を形成するペースト状の食材が凝固した後において、当該凝固した食材が、前記酢飯の一部を覆っているすし食品を得ることを特徴とする、包装容器入りの嚥下食用すし食品の製造方法。
- 包装容器入りの嚥下食用すし食品の製造方法であって、増粘多糖類が添加されたペースト状の食材を、凹部容器の内側に流し込み、当該食材からなる層を形成してから、当該層の上に、水を吸収させた米と、水と、増粘多糖類との混合物を炊飯して得た米飯を使用した酢飯であって所定の形状・大きさをした酢飯を、この酢飯が前記ペースト状の食材によって完全に包まれるように、前記ペースト状の食材の中に押し込むようにして置くことによって、前記層を形成するペースト状の食材が凝固した後において、当該凝固した食材が、前記酢飯の全部を覆っているすし食品を得ることを特徴とする、包装容器入りの嚥下食用すし食品の製造方法。
