(2) 特に、天然香料抽出材料とした場合には、緑茶の場合であれば蒸したての、ウーロン茶や紅茶の場合であれば作りたての、強くて新鮮な香料を得ることができるのでこれを用いて極めて好適な茶飲料が得られる。
生茶葉:フレッシュなグリーン感がある。
揉捻後:甘いジャスミン(インドール的)フローラル感が強くある。
乾燥後:甘いジャスミン(インドール的)フローラル感が多少ある。
という結果であった。
Claims (1)
- 収穫したウーロン茶の茶葉加工工程において、天日委凋・室内委凋・揺青・堆青・炒青・初揉・初供・復揉を経た茶葉を、復供せずに、急速冷凍して保存し、その後足火工程(強い乾燥工程)を経ずに抽出工程に移行させることを特徴とするウーロン茶の製法。
