Description
(a)生茶葉を、40質量%超で60質量%未満の水分含量まで萎凋させる工程;
(b)萎凋させた生茶葉から絞り汁を圧搾して、それによって葉の残渣および茶の絞り汁を生産する工程
を含む、茶製品を生産する方法を提供する。
カメリアシネンシスアッサム種のケニヤン(Kenyan)の生茶葉を萎凋用の木鉢に入れた。各茶葉が、3つの異なる水分含量、73%(基準の萎凋)、68%および50%のいずれかとなるように萎凋されるまで、空気を葉の層に通した。
Claims (7)
- (a)生茶葉を、40質量%超で60質量%未満の水分含量まで萎凋させる工程;
(b)萎凋させた生茶葉から絞り汁を圧搾して、それによって葉の残渣および茶の絞り汁を生産する工程
を含む、茶製品を生産する方法。 - 工程(a)において、生茶葉を、42質量%超で57質量%未満の水分含量まで萎凋させる、請求項1に記載の方法。
- 工程(b)において圧搾された茶の絞り汁の量が、生茶葉1kg当たり少なくとも10mlである、請求項1または2に記載の方法。
- 前記茶の絞り汁が少なくとも10質量%の量の茶固形物を含む、請求項1〜3のいずれか一項に記載の方法。
- 前記茶の絞り汁を希釈することによって飲料が得られる、請求項1〜4のいずれか一項に記載の方法。
- 前記茶の絞り汁又は飲料がクロロゲン酸およびクマル酸を茶固形物の質量に対して合計1.4%未満含む茶固形物を含む、請求項1から5のいずれか一項に記載の方法。
- クロロゲン酸およびクマル酸を茶固形物の質量に対して合計1.4%未満含む茶固形物を含む、茶の絞り汁を含む飲料。
