Description
・新鮮な全茶葉を用意する工程、
・茶葉をプレス機に入れ、葉を圧縮して、それにより茶搾汁液及び葉残渣を製造し、同時に、搾汁液がプレス機を離れる際に、蒸気が搾汁液と接触するように、プレス機の外側に蒸気を当てる工程、
・搾汁液を集める工程、並びに
・葉残渣を加工して、紅茶を製造する工程
を含む、茶製品を製造するための方法を提供する。
Claims (6)
- 茶製品を製造するための方法であって、
a)新鮮な全茶葉を用意する工程、
b)茶葉をプレス機に入れ、葉を圧縮して、それにより茶搾汁液及び葉残渣を製造し、同時に、搾汁液がプレス機を離れる際に、蒸気が搾汁液と接触するように、プレス機の外側に蒸気を当てる工程、
c)搾汁液を集める工程、並びに
d)葉残渣を加工して、紅茶を製造する工程
を含む方法。 - 新鮮な全茶葉が、圧縮する前に物理的萎凋工程に付されていない、請求項1に記載の方法。
- 新鮮な全茶葉が、カメリア・シネンシスのアッサミカ種(Camellia sinensis var. assamica)由来の材料を含む、請求項1又は請求項2に記載の方法。
- 蒸気が搾汁液を少なくとも70℃の温度に加熱する、請求項1から3のいずれか一項に記載の方法。
- プレス機内の葉残渣の温度が60℃未満である、請求項1から4のいずれか一項に記載の方法。
- 圧搾された搾汁液の量が、新鮮な全茶葉1kg当たり50から500mlまでである、請求項1〜5のいずれか一項に記載の方法。
