Description
(B)ゲル化剤、及び
(C)可塑剤、を含有する可食性フィルム。
本発明における加工デンプン混合物(A)としては、エーテル化ハイアミロースデンプン及びエステル化ハイアミロースデンプンからなる群より選ばれた少なくとも一種(a)と、エーテル化デンプンの酸化物、エーテル化デンプンの酸分解物、エーテル化デンプンの酵素分解物及びマルトデキストリンからなる群より選ばれた少なくとも一種(b)との混合物を使用する。
ここで、直接還元糖の分析は、Willstaetter-Schudel法により行うことができる。
本発明フィルムにおけるゲル化剤は、冷却時にゲル化する性質を有するもので、例えば、カラギーナン、ゼラチン、ジェランガム、寒天、アルギン酸塩などの一種又は二種以上を、使用することができる。アルギン酸塩としては、例えばアルギン酸ナトリウム等のアルギン酸アルカリ金属塩;アルギン酸カルシウム等のアルギン酸アルカリ土類金属塩等を挙げることができる。
本発明フィルムにおける可塑剤は、フィルムを軟化させる機能を有するもので、例えば、グリセリン、糖アルコール、単糖類、オリゴ糖類などの一種又は二種以上を、使用することができる。
本発明可食性フィルムは、必須成分である、加工デンプン混合物(A)、ゲル化剤(B)及び可塑剤(C)以外に、フィルムの用途に応じて、栄養剤、各種植物エキス、ハーブ成分、ビタミン類、ミネラル類、抗菌剤、抗炎症剤、抗う蝕剤、抗アレルギー剤、鎮咳剤、乗り物酔い止め剤、ニトログリセリン、カテキン、ポリフェノール、酵素類、香料、染料、乳化剤、風味剤、芳香剤、着色剤、油脂等の任意成分を、適宜配合することができる。
本発明可食性フィルムは、加工デンプン混合物(A)、ゲル化剤(B)及び可塑剤(C)に、必要に応じて、その他の任意成分を含有してなり、常法により、フィルム形状に調製したものである。例えば、(1)原液の調整、(2)塗工、(3)乾燥、(4)保存、(5)カットの工程により、容易に調製することができる。以下に、これらの工程について、説明する。
△:カット前のフィルム表面の一部にムラが有り、カット後の表面の一部に凹凸が見られ、厚さもやや不均一である、
×:カット前のフィルム表面の全面にムラが有り、カット後の表面の全面に凹凸が見られ、厚さも不均一である。
△:落下までの時間2〜10分で、分解がやや遅い、
×:落下までの時間が10分以上で、分解が遅い。
△:口腔内でダマはできないが、溶けるのに20秒以上かかる、
×:口腔内でダマができ、溶け残りがある。
○:フィルムを折り曲げても、ひねっても割れない、
△:フィルムを折り曲げても割れないが、ひねると割れる、
×:フィルムに荷重をかけただけで割れる。
○:フィルムが完全に平らである、
△:フィルムに自然なカールがある、
×:フィルムが縮んだようにカールする。
△:僅かにブロッキングを起こすが、一枚ずつはがすことができる、
×:ブロッキングが発生し、一枚ずつはがすことができない。
ヒドロキシプロピル化ハイアミローストウモロコシデンプン(DS0.12、アミロース含有量65重量%、20重量%水溶液の粘度(50℃、B型粘度計10rpm)248,000mPa・s)、ヒドロキシプロピル化タピオカデンプン(DS0.10)の次亜塩素酸ナトリウムによる酸化物(20重量%水溶液の粘度(50℃、B型粘度計10rpm)600mPa・s)、κ−カラギーナン(CPケルコ社製)及びグリセリンを、下記表1の配合組成で用いて、水分含量11〜13重量%、厚さ60μmの5種類の食品用ラッピングフィルムを調製し、性能試験に供した。
アセチル化ハイアミローストウモロコシデンプン(アミロース含量60重量%、DS0.05、20重量%水溶液の粘度(50℃、B型粘度計10rpm)88,000mPa・s)とマルトデキストリン(商品名「パインデックス#100」、松谷化学工業(株)製、DE3)、κ−カラギーナン(CPケルコ社製)、グリセリン、ビンカ・マイナーエキス(植物エキス、コベックス社製)及び香料を、表2の配合組成で用いて、水分含量11〜13重量%、厚さ50μmの4種類のサプリメント用フィルムを調製し、性能試験に供した。
ヒドロキシプロピル化ハイアミローストウモロコシデンプン(DS0.12、アミロース含有量70重量%、20重量%水溶液の粘度(50℃、B型粘度計10rpm)144,000mPa・s)、ヒドロキシプロピル化タピオカデンプン(DS0.10)のアミラーゼ分解物(商品名「フードテックス」、松谷化学工業(株)製、20重量%水溶液の粘度(50℃、B型粘度計10rpm)70mPa・s)、κ−カラギーナン(CPケルコ社製)、グリセリン、乳化香料(ペパーミントオイル及びショ糖脂肪酸エステルの乳化物)、甘味料及び色素(青色1号)を、下記表3の配合組成で用いて、水分含量11〜13重量%、厚さ45μmの4種類のフレーバーフィルムを調製し、性能試験に供した。
ヒドロキシプロピル化ハイアミローストウモロコシデンプン(DS0.12、アミロース含有量70重量%、20重量%水溶液の粘度(50℃、B型粘度計10rpm)144,000mPa・s)、ヒドロキシプロピル化タピオカデンプン(DS0.10)の次亜塩素酸ナトリウムによる酸化物(20重量%水溶液の粘度(50℃、B型粘度計10rpm)600mPa・s)、κ−カラギーナン(CPケルコ社製)、グリセリン、ビタミン類及び香料を、下記表4の配合組成で用いて、水分含量7〜11重量%、厚さ50μmの3種類のビタミン含有フレーバーフィルムを調製し、性能試験に供した。
Claims (8)
- (A)エーテル化ハイアミロースデンプン及びエステル化ハイアミロースデンプンからなる群より選ばれた少なくとも一種(a)と、エーテル化デンプンの酸化物、エーテル化デンプンの酸分解物、エーテル化デンプンの酵素分解物及びマルトデキストリンからなる群より選ばれた少なくとも一種(b)とを、両者の合計に基づいて、(a)成分が30〜90重量%で、(b)成分が70〜10重量%となる割合で混合した加工デンプン混合物100重量部、
(B)ゲル化剤12〜50重量部、及び
(C)可塑剤3〜40重量部、を含有する可食性フィルム。 - 加工デンプン混合物(A)における(a)成分と(b)成分との混合割合が、両者の合計に基づいて、(a)成分が40〜75重量%で、(b)成分が60〜25重量%である請求項1に記載の可食性フィルム。
- エーテル化ハイアミロースデンプンが、ヒドロキシプロピル化ハイアミローストウモロコシデンプンである請求項1に記載の可食性フィルム。
- エステル化ハイアミロースデンプンが、アセチル化ハイアミローストウモロコシデンプンである請求項1に記載の可食性フィルム。
- エーテル化デンプンの酸化物が、ヒドロキシプロピル化デンプンの酸化物である請求項1に記載の可食性フィルム。
- エーテル化デンプンの酸分解物が、ヒドロキシプロピル化デンプンの酸分解物である請求項1に記載の可食性フィルム。
- エーテル化デンプンの酵素分解物が、ヒドロキシプロピル化デンプンのアミラーゼ分解物である請求項1に記載の可食性フィルム。
- フィルムの厚さが、20μm〜200μmである請求項1に記載の可食性フィルム。
