Description
全脂粉乳90kgと、グルコース10kgを均一に混合し、振動乾燥機(中央化工機社製)に供給し、95〜120℃、10分間反応させた後、解砕し60メッシュ篩過することにより、淡褐色でキャラメル風味の本発明のフレーバー組成物を92kg得た。
全脂粉乳90kgと、グルコース10kgを均一に混合し、ニーダーに供給し、焦げ付かないようにハンドリングによる微調整を行いながら95〜120℃で10分間反応させた後、直ちに冷却し、粉砕し20メッシュ篩過することにより、褐色でキャラメル風味のフレーバー組成物を84kg得た。
実施例1と比較例1のフレーバー組成物を、そのまま及び2%水溶液として、熟練したパネル7名で評価を行った。その結果、実施例1のキャラメル風味フレーバー組成物は比較例1に対して嗜好性が高い他、比較例1のキャラメル風味フレーバー組成物は味の厚みがなく、色調にムラがあるとの評価であった。
全脂粉乳70kg、グラニュー糖20kg及びグルコース10kgを均一に混合し、振動乾燥機(中央化工機社製)に供給し、95〜120℃、10分間反応させた後、解砕し60メッシュ篩過することにより、淡褐色でキャラメル風味の本発明のフレーバー組成物を90kg得た。
実施例2のフレーバー組成物を使用してキャンディーを調製し、評価したところ、自然で好ましいキャラメルの風味が付与された極めて美味しいものであった.
Claims (5)
- 乳製品粉末と糖とを実質的に非水条件で加熱反応させフレーバー組成物を製造する方法において、加熱反応させる原料混合物の水分含量が、0.01〜10質量%であり、加熱反応を、温度50〜200℃、反応時間15秒〜10時間の範囲の条件で、振動乾燥機を使用して振動を与えながら行うことを特徴とするフレーバー組成物の製造方法。
- 乳製品が、全脂粉乳、脱脂粉乳、加糖粉乳、全粉調製品、脱粉調製品から選ばれる1種または2種以上であることを特徴とする請求項1記載のフレーバー組成物の製造方法。
- 糖が、グリセルアルデヒド、エリスロース、トレオースアラビノース、キシロース、リボース、グルコース、マンノース、ガラクトース、ジヒドロキシアセトン、キシルロース、リブロース、フルクトース、ソルボース、2−デオキシリボース、ラムノース、フコース、マルトース、セロビオース、イソマルトース、ラクトース、シュクロースから選ばれる1種または2種以上であることを特徴とする請求項1または請求項2に記載のフレーバー組成物の製造方法。
- 請求項1〜請求項3のいずれかの項に記載の製造方法により製造されたことを特徴とするフレーバー組成物。
- 請求項4記載のフレーバー組成物を含有してなることを特徴とする飲食物。
