Abstract
Description
酢酸カリウムは、酢酸と水酸化カリウム又は炭酸カリウムなどのカリウム含有塩基との反応によって調製することができる。酢酸カリウムは、食品添加物として、防腐剤及び酸度調節剤として使用される。欧州連合において、酢酸カリウムは、E番号、E261と分類される。酢酸カリウムは、非常に吸湿性である。
本発明者らは、相当な量の酢酸カリウムを含有し、且つ優れた安定性を発揮する酢酸塩粒子から成る、自由流動性粉末の製造を可能にするプロセスを開発した。より詳細には、本発明者らは、以下の特徴:
酢酸ナトリウム水和物、酢酸ナトリウム無水物及びそれらの組合せから選択される酢酸ナトリウム成分を少なくとも80重量%含有する、1つ又は複数の担体粒子を含むこと、

カリウム及びナトリウムを、0.4:1〜5:1のモル比で含有すること、及び
40〜1000μmの範囲の粒径
を有する、少なくとも10重量%の被覆酢酸塩粒子を含む、粒状製品に関する。
新鮮肉の加工製品(例えば、ハンバーガー、フライドソーセージ、ケバブ、チキンナゲット)
肉の塩漬け品(例えば、生の塩漬け牛肉、生ハム、調理牛肉、調理ハム、再構成製品及びベーコン)
生肉の調理製品(例えば、フランクフルトソーセージ、モルタデラ、リオナソーセージ及びミートローフ)
調理済みの調理製品(例えば、レバーソーセージ、ブラッドソーセージ及びコーンビーフ)
生(乾燥)肉の発酵ソーセージ(例えば、サラミ)
乾燥肉
を含む。
酢酸ナトリウム水和物、酢酸ナトリウム無水物及びそれらの組合せから選択される酢酸ナトリウム成分を少なくとも80重量%含有する、担体粒子の流動床を形成するステップ、
少なくとも30重量%の酢酸カリウムを含有する水溶液を流動床に噴霧することにより、担体粒子を噴霧コーティングするステップ、及び
噴霧コーティングされた担体粒子を乾燥するステップ
を含む、プロセスに関する。
実施例1
本発明の被覆酢酸塩粒子を、以下に記載するように、グラット(GLATT)(登録商標)流動床乾燥機中で調製した。
Claims (15)
- 少なくとも10重量%の被覆酢酸塩粒子を含む粒状製品であって、
前記被覆酢酸塩粒子は、
酢酸ナトリウム水和物、酢酸ナトリウム無水物及びそれらの組合せから選択される酢酸ナトリウム成分を少なくとも80重量%含有する、1つ又は複数の担体粒子を含み、
前記1つ又は複数の担体粒子を覆うコーティング層を含み、前記コーティング層が、少なくとも60重量%の酢酸カリウムを含有し、
カリウム及びナトリウムを、0.4:1〜5:1のモル比で含有し、及び、
40〜1000μmの範囲の粒径を有する、粒状製品。 - 前記1つ又は複数の担体粒子が、少なくとも90重量%の酢酸ナトリウムを含有する、請求項1に記載の粒状製品。
- 前記コーティング層が、少なくとも70重量%、好ましくは少なくとも80重量%の酢酸カリウムを含有する、請求項1又は2に記載の粒状製品。
- カリウム及びナトリウムが、前記被覆酢酸塩粒子中に0.5:1〜3:1のモル比で存在する、請求項1〜3のいずれか一項に記載の粒状製品。
- 前記酢酸ナトリウム成分及び酢酸カリウムの組合せが、前記被覆酢酸塩粒子の少なくとも80重量%、好ましくは少なくとも90重量%を構成する、請求項1〜4のいずれか一項に記載の粒状製品。
- 前記被覆酢酸塩粒子が、3.5重量%未満の含水量を有する、請求項1〜5のいずれか一項に記載の粒状製品。
- 少なくとも30重量%の前記被覆酢酸塩粒子を含有する、請求項1〜6のいずれか一項に記載の粒状製品。
- 乳酸ナトリウム、乳酸カルシウム及びそれらの組合せから選択される少なくとも80重量%の乳酸塩を含有する、乳酸塩粒子を10〜90重量%さらに含有する、請求項1〜7のいずれか一項に記載の粒状製品。
- 少なくとも40重量%のアルカリ金属プロピオン酸塩を含有する10〜90重量%のプロピオン酸塩粒子をさらに含有する、請求項1〜8のいずれか一項に記載の粒状製品。
- 少なくとも80重量%、より好ましくは少なくとも90重量%の前記被覆酢酸塩粒子を含有する、請求項1〜7のいずれか一項に記載の粒状製品。
- 0.40〜0.80g/mlの範囲のかさ密度を有する、請求項1〜10のいずれか一項に記載の粒状製品。
- 前記被覆酢酸塩粒子に含有される前記1つ又は複数の担体粒子が、10〜300μmの範囲の粒径を有する、請求項1〜11のいずれか一項に記載の粒状製品。
- 請求項1〜12のいずれか一項に記載の粒状製品を、食品又は飲料の0.1〜10重量%の濃度で配合するステップを含む、食品又は飲料を調製する方法。
- 請求項1〜12のいずれか一項に記載の粒状製品を製造する方法であって、
酢酸ナトリウム水和物、酢酸ナトリウム無水物及びそれらの組合せから選択される酢酸ナトリウム成分を少なくとも80重量%含有する担体粒子の流動床を形成するステップ、
少なくとも30重量%の酢酸カリウムを含有する水溶液を流動床に噴霧することにより、担体粒子を噴霧コーティングするステップ、及び、
噴霧コーティングされた担体粒子を乾燥するステップ、
を含む、粒状製品を製造する方法。 - 前記水溶液が少なくとも40重量%、好ましくは少なくとも50重量%の酢酸カリウムを含有する、請求項14に記載の方法。
